After guests enter their details they are no longer in the lists or segments (ceremony, Reception, etc)

Hello, I have an issue with the guest list feature. It was all sorted in lists A, B and C, and I requested email/addr info from A group now. As they are filling in, they are disappearing from the A list and also there is no way of selecting segments (Ceremony etc), the buttons are gone.....

Is there any fix to this please? My whole list is now messed up, as some are entered manually and are still fine and on the lists.

Update: I found a solution to this issue, you go to e.g. Ceremony and click plus to add people missing, I click 'all' and add everyone. Then I go to the next two segments and do the same,
