Another recipe question - rocky road?

If I was making a rocky road type fridge cake, would it be okay to use margarine instead of butter? (Yes, it's for that pesky vegan again - I didn't add to the other thread because I thoiught this might get different people reading.)

    Might be better with vegetable shortening, that's what we used to make chocolate crackles. You'd have to make sure you were using vegetarian marshmallows, as well.

    Good thinking re veg shortening. Flumps are gelatin free, apparently, so they might do the job. WIll check.

    I would use margarine in this type of recipe and thus far the majority of things I make have turned out fine.

    But doesn't rocky road have marshmallows in it? - they're not suitable for vegans (gelatine).

    edited to add, I didn't see your reply about flumps until after I posted this!

    Yup - but you also need to check the colourings too. Just because something's vegetarian friendly, doesn't automatically mean that it's vegan friendly.

    I'm not sure flumps are gelatin free actually - this website says they aren't. http://www.sweetieworld.co.uk/marshmallow/flumps_twist/

    I was getting all excited about them being veggie as well!

    Any kosher shops near you? They might be worth a try for marshmallows.

    Hmmm... I was just looking at anothr site which says the same as the link you've posted. Bum. Maybe use big fat sultanas instead, for chewyness. Or dried apricots.

    Just googled and it seems that kosher gelatine is often made from fish. I thought it was more often agar, but apparently not.

    I'd ditch the marshmallows all together and make flapjacks I think. Too difficult.

    I just popped you a vegan marshmallow recipe on the other thread

    it's a bit of a faff, but it's such a treat getting marshmallows as a vege that maybe they'd be worth it on their own

    Most foamy type sweets (like shrimps and foam bananas), marshmallow-y sweets and chewy sweets (like chewits & starburst) are made with gelatine, unfortunately.
