If I am to freeze sponge would wrapping it in cling film be enough? How long do they keep in the freezer (out of interest as I will be getting them out end of the week to decorate for the weekend)?

?

I usually freeze my sponge cake in slices and wrap them in baking parchment in a sealed box and it can last quite some time.

    Thanks Shnarfy.

How about whole sponge though as it is meant to be for a birthday cake? Thanks.

I've never frozen a whole cake before so I'm not too sure, I can't think of any problem when doing this though, I'm sure it will be fine

Thanks. It is in the oven right now and is smelling rather delicious. I'll be buying a back up cake anyway (just in case I completely *** this one up!)

Mr chef says wrap it in clingfilm but it MUST be cool/cold first then wrap it again (as long as it's just a plain sponge) he also said if you can put it into a food container then the freezer even better as that way it wont get ice on it

he reckons it'll be good for about 6mths!

Thanks everyone. I covered it and left it to cool down overnight and then wrapped it in clingfilm and popped it in the freezer this morning. Just need to get it out later in the week to decorate it now. I may make a back up sponge this evening as well just in case!

I'm really glad I read this because I had no idea you could freeze cake. This would be brilliant for Jack's birthday in a few weeks time as I am working in the days running up to his party, so means I can make in advance and then defrost day before to ice I presume?

Let us know if it works ok Petal!

Will do catarina. That is exactly what I am planning to do. Ice this Saturday in prep for Sunday's party. I also need to bake 30 odd cupcakes and a whole load of scones too. Plus make up the sandwiches on the Sunday. What was I thinking??

Still, I'm sure it will be worth it.?

Cling film is fine and you can freeze them for ages. You can also make buttercream icing and freeze it. Which is just as well as I always make too much !

I'm going to Costco for cupcakes, danish pastries etc. Infact pretty much everything except for the birthday cake! I might even go for pizzas rather than sandwiches to make it easier.

Every party we do I massively over cater and end up stressed before the party has even begun from running around, so I'm going to simplify this year.

Last year for Sophie's birthday, I did sandwiches and crudities, fairy cakes and fruit platter for the kids, and for the adults I made a big chilli con carne the day before which I just reheated on party day, and bunged a load of jacket potatoes in the oven. That went down well! But it was the end of November, and a lunch time party, so needed something warming.

How come the cake books never tell you this? This would have made last year's pirate ship cake extravaganza so much easier!

I'm going to try this, I need stress-free party preps this year.
