    I made this for OH's birthday - chocolate overload, but looked nice, was actually quite easy, and a good crowd pleaser

    or my signature bake is an apple crumble cake, which never lasts more that a day!

    Mississippi Mud Cake..made it for Mr fs birthday back in November and its amazing!!


    Mississippi Mud Cake

    (Makes 3 x 8inch layers)

    For the sponge:

    9oz Butter

    1lb 5oz Castor Sugar

    3 Large eggs

    1lb 1oz Plain flour

    5oz Cocoa Powder

    2tsp Bicarb

    ½ tsp Salt

    375ml Buttermilk

    1tsp Vanilla Extract

    375ml Boiling Water

    For the Frosting:

    1 3/4lb icing Sugar

    4oz Cocoa Powder

    5.5oz Butter

    1lb 5oz Full fat Cream Cheese

    1. Preheat Oven to 170c
    2. Cream butter and sugar together until light and fluffy. Add eggs one at a time, scraping down sides after each one
    3. In another bowl, sift the flour, cocoa powder, bicarb and salt.
    4. In a jug mix the buttermilk and vanilla extract together
    5. Add the dry ingredients to the creamed butter and sugar in 3 parts, alternating with the buttermilk and vanilla. Mix on a medium speed.
    6. Slowly add the boiling water until fully combined
    7. Divide evenly between three 8inch cake tins and bake for 35-40 mins (I checked after 25 and it was nearly done!)
    8. Remove from tins and allow to cool COMPLETELY before frosting

    Icing

    1. Mix the cocoa, sugar and butter gradually together on a slow speed until sandy in texture and no large lumps of butter
    2. Add a little cream cheese t loosen mixture and then beat until smooth
    3. Add the remaining cream cheese and mix on a slow speed until incorporated. Turn up to high and beat until light and fluffy

    Assemble bottom layer of cake on a plate or board and add a layer of icing. Add second layer, add another layer of icing before topping off with final layer. Smother sides in icing and finish off by covering the top!! The icing should be quite thick all over J

    Muppet that's the cake I want to make for my H's birthday but I want to do 2 tiers! And round the edge I'm hoping to use orange matchmakers and fill the middle with peanut m&ms, got to have a trial run this weekend

    This is my favourite which everyone seems to go mad on - the almonds keep it really moist and it's just so tasty and really, really easy

    Thank you all for your recipes ? They all sound fab!

    Looking at the pics, I am scared that I am going to end up with a pinterest fail version of one of these!

    Now my next challenge is to find my baking tins which are still packed in a box somewhere....

    Ha, I didn't realise that the recipe was in imperial either until I got to the supermarket to buy the ingredients! I had to park my trolley and find a website on my phone that would do a conversion!

    This is what I calculated it to be (happy to be corrected though):

    For the sponge -

    255g butter

    595g caster sugar

    481g plain flour

    141g cocoa powder

    Eggs, bicarb, salt, buttermilk, vanilla extract & boiling water as per Flow's recipe! I actually used about half of the boiling water specified as mine seemed a bit sloppy.

    For the frosting -

    793g icing sugar

    113g cocoa powder

    155g butter

    595g cream cheese
