Can anyone recommend a vegetarian cookbook?

For my mum. She wants something with recipes for "things you'd actually make and eat, like pasta rather than nut roasts". She has decided that decent meat is now a luxury to have only occasionally, so I think she's looking for everyday meals rather than recipes for entertaining.

I think because I gave up meat for 18 months as a teenager she sees me as an expert on all things vegetarian.

    I have a National Trust Vegetarian cookbook which is good - the recipes are the ones they use at their stately homes in the restaurants.

    The best veggie recipe book I have is called The Vegetarian Kitchen by Susan Gardner - but since OH bought it for me from The Works about 5 years ago it might not be available now - I can't find it on Amazon. It has lots of nice and simple recipes that are good for every day.

    Delia's vegetarian book is ok but some of it is a bit fancy.

    The Leon book looks wonderful. I might get that for myself at somepoint.

    My mum is Delia obsessed, I'll need to check whether she's already had a look at her book, maybe that's why she's asking for something more everyday. I've found the Veggie Kitchen one on ebay.

    Leith's Vegetarian Bible and Maddhuir Jaffrey's WOrld Vegetarian are both fab.

    Anything by Rose Eliott is usually good. I;m not a vegetarian any more but still use these more than other recipes books. They're great for cheap everyday meals that are fairly quick and straightforward.

    Delia has a vegetarian one - I have it. I would tell you what its called, but we're mid-move and I have no idea what box its in!

    TBH, I dont use it that much, mostly because she uses a lot of whole spices, and for every day cooking I can't be dealing with faffing around grinding them.

    I have loads of veggie cookbooks (being veggie and all that) but I don't think there is a single one that jumps out as being really good for every day stuff, so I'll also be interested in any that are recommended.

    Leith's vegetarian bible, far & away the best veggie cookbook ever. I'm still nostagically attached to The VEgetarian Kitchen by Sarah Brown, as this was my mother's go-to book when I first turned veggie in <cough> 1984 (I was a really early starter, obviously ?) It's a bit dated and brown-ricey these days though. Other than that, I quite often use ordinary cookbooks & adapt them away from meat, but I'm not a slavish follower of recipes.

    H'mmm. I really need some new cookbooks actually...inspiration needed here too.

    I've got the Delia one, think it's called "vegetarian collection" but a lot of it is a bit faffy, although tasty. Rose Elliott is good for everyday stuff, there's a pasta one which I used a fair bit, and a 'low gi' one which has a few nice things but seemed to be a bit healthy for my liking! I've also got Linda McCartney and there's some recipes in there which used meat substitutes (quorn, soya etc).

    Delia's one is good. I use that quite a lot.

    I think I also have one called Cranks or something? But as you can tell I haven't used it for ages!

    The Leiths is a brilliant book - not had a bad recipe out of it. Would particularly recommend trying the Roast Red Pepper and Tomato soup, and the Butternut Squash and Red Pepper Stew.

    Hope she likes it - I'm sure she will!
