Can I share a lovely soup recipe?

I made this the other day out of stuff that needed using up and it was lovely.

1 BNS, cut in half, drizzle in OO and roast. When cooked roughly dice.

Chop 1 onion, soften in a little butter and a bit of OO. Add the diced BNS, 1 tin of tomatoes, 1 chopped fresh chilli and some veg stock.

Boil for a while then blitz with the hand blender.

Wintery & warming and lush.

Enjoy.

    That sounds amazing! I too have a lush soup recipe to share - I call it Potage a la Jade, after the heroine of my sister's book who she describes cooking it ?

    Chop off the stem end of a head of garlic, wrap it on foil and roast - this takes about 20-25 minutes at 180. Chop an onion, a couple of sticks of celery, a courgette, half a red pepper and half a loop of chorizo, and grate a carrot. Saute everything in olive oil with a couple of dried chillies. Add a can of tomatoes, about a can and a half of water, a spoonful of Marigold stock powder and some rinsed Puy lentils. Cover and simmer until the lentils are cooked - about 45 minutes. Squeeze in the garlic and serve with bread and some grated cheese if you like.

    I do one that is really similar, I don't use tomatoes or the veg stock, but I make my own chicken stock, it's beyoo'ful.

    Iris that sounds delish, 2 q's

    1. do you have to take the skin off the BNS...if so is there an easy way

    2. how long do you roast it for, I never seem to do it for long enough and it's always solid

    Tahdah, I roast it in the skin & then sort of scoop it out before I put it in the soup. It takes ages to roast but as long as it's cooked enough to come out of the skin it's OK.

    OO= olive oil.

    Sophie, that sounds gorgeous. I think the small boy will love that as he adores chorizo & lentils.
