It wasn't too hard actually. It was massive though - 12" by 8". The worst bit was the white layer, and the blue base of the map. Tricky. The flags were surprisingly easy to rustle up.

DWC, I traced the countries off a map onto greaseproof paper, and then cut through the paper into the icing. A faff, but it worked quite well ?

That is magnificent - I'm in foreign parts and have been for the last few days, so I only got to see the blueprints and hear about JK's plans in exhaustive/exhausting detail over the last few weeks, so I'm glad I had a chance to see the end result.
