Cheesecake Suggestions

    I dont know what happens with this forum but everytime I submit a post it omits thr contents. Anyway i will try from my phone.

    So I am looking for advice from you lovely ladies again.

    We are looking to have a cheesecake at our wedding, when I say cheesecake I am not thinking of the strawberry and cream cheese variety!

    We would like to have several layers of cheese rounds/full cheeses, probably five or six layers but we have no idea which cheeses would work best.

    Have any of you had cheesecakes? If so what varieties were used on yours???

    Any help and/or advice would be greatly appreciated.

    I actually used to sell cheese cakes! Excellent choice!

    It depends on how many people you want to feed.Traditionally a Cheddar goes at the bottom. Usually a ring if Cheddar as the whole ones weigh about 25kg!!

    Alternatively a yarg (which has green nettle leaves around it so looks pretty).

    Gloucester's work well as a second layer, also cheeses such as Berwick edge, Herefordshire hop and Rachel are all nice colours and taste amazing.

    Bries and soft cheeses for the top, a tunworth is an english camembert style which tastes amazing and looks nice on the top. You can also buy a French goats milk called coeur de neuefchatel which are heart shaped for the top.

    Things to bear in mind, you'll need more of the soft cheeses at the top so theres enough to go round. Any humidity or warmth can make the cheeses sweat so get your venue to keep in the fridge until the last minute. If you're decorating with real flowers red roses will stain the cheese.

    Depending where you are based if you google Paxton and Whitfield( the company I used to work for) they can do an in store tasting for you.

    I'd definitley include some Lancashire cheese, either crumbly or tasty. You can get heart shaped Wenslydales for the top too. Where in the country are you based?

    We bought a cheese cake from Godminster cheese, it was £64 for five layers and we added 1kg of Stilton to it as well. It went down really well, and didn't require much thought or planning.

    Like has been said, softer cheeses go at the top and harder ones at the bottom.

    I can't remember the exact cheeses but hopefully you can make some out from the photo. The green one on the left is a garlic cheddar (delicious) and the orange one under it is chilli flavoured. Right at the bottom I think was a standard cheddar as we thought that'd be most popular so got the biggest of that.
    Our supplier also gave us cut outs in red and white cheeses (sorry not certain the types) in heart shapes. The venue didn't put those out unfortunately so they're not in the picture.

    We ended up with more of a cheese pile than a tower, but I love how it came out Smiley smile

    We paid £100 for all of it and had loads left over - our evening had 150 guests to give you an idea of how much you'd need.

    We just went to our local market and spoke to the cheese guy there. It did help that we knew him anyway but I would have done that regardless.
