Chicken pie

I made a chicken pie this evening, with left overs from SUnday's roast. It was OK, but a bit blah.

How do you make your chicken pies interesting?

(without leeks. I haaaaaaaaaaaaate leeks)

    Good stock, loads of cream. Bacon or ham if you fancy.

    Last time I made chicken pie I put some ham, peas and mushrooms in there too. I made the sauce from the stock created by boiling the bones, added a bit of cream for indulgance and hey presto!

    It had good stock. I know, I made it myself ?

    No cream though. may try that next time, and some bacon. Mmmm bacon.

    WEES said about bacon, but I also add a bayleaf as I like the flavour it adds.

    Jamie Oliver's chicken pie also has sausage meat under the pastry which is quite nice. Its in Jamie's Dinners

    Ohhh I made a gorgeous chicken pie last week...was with leeks but I added these so they can be easily omitted. I also added mushrooms and pancetta plus pasty on bottom and top and missed out the peppers.
