Courgettes & Mushrooms - what can I make with them?

As the title suggests really. I'm batch cooking as I'm back at work next week so need some new and exciting ideas for veg that I can cook up and freeze in order to feed my baby quickly.

I've seen talk of stuffed courgette on here, but don't have a clue what I'd use to stuff it though.

Last night I made some cauliflower cheese with cauliflower that was just on the cusp of turning brown and I don't want to have to chuck the rest of the veg in the bin like I normally do. I have this tendency to buy veg thinking I'll be very organised and healthy and that I'll cook it all up, but instead it sits in my fridge until it goes mouldy then gets chucked!

Please help me be less wasteful.

    Obvious thing is rattaouille - great way of using up random veg.

    Also, Nigella has a lovely recipe for courgette and chick pea filo pastry pie - very easy to adapt again to all sorts of leftover stuff. It would freeze uncooked, I would have thought.

    Favourite way of using up courgette in this house is in Nigella's Courgette Cake - in fact I made one yesterday and my colleagues have just woolfed it down.

    No idea for baby recipes but the courgette I would make into courgette bread or ratatouille - both freeze - and the mushrooms I would slice and freeze so they are ready to put on pizza, add to pasta sauce, etc.

    Carbonara (buggered if i can spell it)

    Make the sauce using 25-30g grated parmazan, 2 Egg yokes and and 3-4 tablespoons of the water from boiling up the linguine.
    Mix them all together in a large bowl.

    Chop the mushrooms and courgettes into small pieces, pan fry them for a few minutes and then put them into the sauce.
    Stir in the already cooked Linguine and you have a lovely meal right there.

    Usually i use smoked bacon instead of the mushrooms and courgettes, but id try that!

    I'd make courgette cake, i'd also chop up oodles of veg and roast, inc potatoes, once cold bag up then you can have a bag at a time with fish etc. or puree them to make roast veg soup. (add stock)

    mushrooms, mushroom bake? like a nut loaf but with added mushroom, or make bolognese, or add to the roasted veg tray near the end (so they don't end up as wee little burnt bits!) or mushroom stroganoff.

    Thanks for the ideas guys, I think I'm going to try ratatouille. Does anyone have a tried and tested recipe for it?

    That's a good idea and has saved me from posting tomorrow's question of what to do with carrots and potatoes! Do frozen roast potatoes come out nice when re-heated or do they get that grainy dry texture?

    Not sure if baby will like it, my toddler sometimes does, sometimes doesn't but courgette & potato soup is gorgeous. Quick & easy to make & freezes well.

    4oz butter, 2lrg onions, 2 large courgettes, 2 large potaoes, garlic, chives, parsley. 1 litre chicken stock (easily made my boiling carcass of chicken for couple hours)

    Melt butter in frying pan, fry onions courgette & garlic for 4 mins, add stock & peeled, choopped potatoes. Bring to boil & then simmer until potatoes are soft.

    Blitz with hand blender & add chopped herbs (dried are fine). You could also add pepper but I like it better without.

    Serves 4-6

    Making a big batch of soup is always a favourite way of mine for using up veg that are just past their best.

    or chucking it in an omlette.
