Dessert after another Christmas dinner?

Sunset21, 30 December, 2008 at 07:32 Posted on Off Topic Posts 0 10

I've decided to have my parents around for another christmas dinner but on NY day. What can we have for pudding? I've been through the two Nigella books I have here (Forever Summer and another one i've forgotten the name of) but nothing inspires me. Anything anyone can recommend that tastes/looks lovely but doesn't have a long list of ingredients and isn't too difficult to assemble?

In Nigella Express there is a fab quick chocolate mousse recipe that someone on here recommended to me. It's a piece of piss and I've made it loads since, my brother is it's biggest fan ?

If you haven't got Express I can type out the recipe for you.

I have made Delia's lemon roulade two Christmasses in a row now and it's dead easy, looks impressive and tastes fantastic. Recipe here: https://www.deliaonline.com/recipes?utm_source=www.hitched.co.uk&utm_medium=d&utm_campaign=otn&utm_content=from--recipes/lemon-roulade%2C1064%2CRC.html--to--node/14163

I halve the ingredients listed in the recipe though to make just one roulade. 1 roulade fed 7 adults with some left to spare.

We had icecream for Christmas Day. I bought a nice vanilla and a bag of fancy dried fruit with dates and papaya as well as the usuual raisins, sultanas and cherries. I soaked the fruit in some brandy, softened the ice cream slightly and mixed it all together with a spoonful of mixed spice. We had it served in wafrer baskets. It was delicious and a really refreshing change from Christmas pud, although it had a very similar flavour. I made it a few days before Christmas as well, and kept it in the freezer.

The Nigella Express cheesecake is super easy and goes down a storm with my lot. She also has a white chocolate and mint dessert that is yummy (but very rich) that I serve in cocktail glasses.

I would make a pile of shortbread (in twee Christmas shapes, if you please!). Then I'd layer it up with some pears and plums roasted in honey and some whipped cream with a splash of brandy or whisky. You can then give them the rest of the shortbread to take home or can munch it with coffee.

Thanks for all the replies guys, they weren't quick enough unfortunately and I decided to go retro and do meringue piled up with fresh fruit and whipped cream but now i'm doing it sunday so the fruit I bought today could well be rancid by then. Oops. Is the Nigella choccie mousse the one with marshmallows? If so then i've done it before for the inlaws but it's very very rich. Maybe I did it wrong.
