Dinner thread

What's everyone having? I bought some organic salmon fillet - god knows why, I normally hate cooked salmon but felt like it for some reason. I'm thinking of marinading it in OO and BV and serving with roast winter veg, but welcome suggestions.

    The BBC Good Food mag has a recipe I want to try for salmon on a bed of spinach and a lemon caper sauce (I think).

    We're having goats cheese tortellini with tomato and basil sauce, and salad.

    Mmmm I love cooked salmon but tend to just have it with a salad and some new potatoes ?

    Does the balsamic not ruin the taste?

    I've got a korma in the slow cooker but suspect I'll make up an Orzo salad and have the korma tomorrow.

    I'm home alone so am having nicoise salad.

    I like salmon poached with lemon and garlic.

    Put the fillet in a sandwich bag with a tablespoon of honey and a tablespoon of light soy sauce. Add a few chilli flakes and either griddle or dry fry. Serve on top on egg noodles with some veggies on the side. ?

    Ickier meatballs, but with homemade tomato sauce and spaghetti rather than cream sauce and chips. About as healthy as Ickier meatballs can get I reckon.

    I'm on a real health kick so my dinner every night will be vegetable soup with seaweed and lots of healthy veg.I'm hoping it will make me feel less sluggish!

    We are having beef olives with mashed potato and carrots. yum. not had them in a long while.

    i too am not a fan of cooked salmon but when we have trout i love it with chilli, lime and coriander so rice or noodles go best.

    I'm making a big pasta bake with some chicken and loads of veggies, chick peas and tin toms. ?

    It will last me for 3 nights as I am too busy to cook after tonigh and H is only around tonight so after that I am too lazy to do much for just me.

    Veg soup every night? why don't you alternate the type of soup? WW forum have some good recipes, the spicy butternut squash soup is lovely.

    Chicken with pasta, rocket pesto, rocket, artichokes and tomatoes.

    Followed by M&S Plum & Almond pudding with Mulled Wine Sauce and custard?

    Oh I do vary it, not the same every night. It's my aim to become more macro (although not sure I'll ever be eating brown rice!)

    Brown rice rocks ? Try it a few times and you'll see the light - I much prefer it to white now.

    Spicy chilli butternut squash risotto from the slimming world website

    When i do salmon i put some handfuls of spinach into a roasting tray and sprinkle with a little water. soften off some leeks and put over the spinach. place the fillets on top and squeeze lemon juice over along with freshly chopped ginger - shove in the oven
