Do you keep your eggs in the fridge?

    I must have missed it then.

    I've always kept eggs in the fridge and thought everyone else did too. It was only last night when I visited a new friend's house that I noticed she keeps hers out of the fridge, in a wire basket.

    I think I need to get out more.

    Not in the fridge. Cold eggs make for crap baking and I'm a spontaneous baker so don't have time to wait for eggs to come up to room temperature. Plus, eggs absorb the smell and taste of other foods in the fridge and leftover curry cakes are an acquired taste.

    Oh! I bake quite a lot of cakes too and have never waited for the eggs to get to room temperature. I didn't know you were meant to. Does it make a difference then?

    In the fridge, but only because I don't want the egg carton on the side and I haven't yet seen an egg basket / tray that I like...

    I fear this is going the same way as the salt pig - I've been looking for over a year and still can't find one I like.

    In the fridge 'cos there's a tray. Don't do any much baking.
    H was advised by food hygiene person they had in at work that they shouldn't be kept in the fridge as it increases cooking times.
    I do like those wire chickens, might get one...

    Cockchops?! I'll have you know my house is the epitomy of sanitisation and my chops would never go anywhere near anything as mucky as a cock.

    My eggs are as sanitised as my chops, thank you.

    Sadly, not in the Boop household. I don't like any of her cookware stuff, really.

    I've lost count of the number of times I've found a possibilty on-line, added it to my shopping basket only to chicken out when it comes to actually paying.

    Growing up we had a 'chicken' that the eggs were kept in a la Mrs Boswell in "Bread" ?

    Hurrah! I was beginning to think I was decidedly odd as I find her kitchenware unattractive and overpriced. It seems to be almost a capital offence to criticise Nigella on here. ?

    What are you looking for in a salt pig? Mine is just a small, plain white one although I like my mum's plain terracotta one too.

    That is really interesting. I'm a chef and we have recently be told that it is environmental health policy that eggs should be treated the same as raw meat for storage purposes ie, in fridge on the bottom shelf. The company I work for is very hot on implimenting the latest environmental health advice, so I think it is a fairly recent thing.

    When I mentioned about supermarkets not keeping eggs refridgerated I was told that they are being stubborn because of the cost of installing new fridges for eggs in all the stores, and it is causing some controversy, but eventually they will have to tow the line.

    Just to add, I keep my eggs in my fridge because it is huge, but I'm also quite happy to eat eggs at my mums, who keeps tham in a basket.

    Out of the fridge, in the box in a cupboard.

    (Along with the ketchup, marmelade and jam and all the other things that H always wants to refridgerate but I never have done!).

    In the fridge but I have been told by several people that its is 'wrong' to keep eggs in the fridge. Something to do with them not cooking properly. But I dont have anywhere else to keep them.

    On the side, as someone who makes lovely cakes told me they were better if you had your eggs at room temp. And they're not in the fridge at the super are they? MrSC occasionally tries to tidy them away, if I ask him why the only reason he can come up with is 'But there's a section for them in the fridge'. So I took it out ?

    I ignore dates on eggs too since someone taught me the trick of floating them to see if they're off. Did this with a box of 6 that was about a month out of date a couple of weeks back and only one floated, the rest were fine to use.

    SC - what's the floating trick? I'm anal about use by dates even though I know most of them are a load of tosh but after being hospitalised with food poisoning a few years ago I get a bit twitchy...

    KT - put them in a jug/bowl of water. If they sink, use them, if they float, they've gone over - something to do with the bacteria creating air pockets. Of course, the theory is that you can smell a bad egg so even if you didn't do this you'd be fine, but I just like saving myself the stink in my kitchen!

    Eggs are too expensive these days to waste IMO.

    Another one who doesn't keep eggs in the fridge.

    I've also been told that cakes are better when they're made with room temperature eggs. Maybe one day I'll make 2 cakes, one with refridgerated eggs and one without and see the difference ?
