Done before (sorry cannot find it) but INSPIRE me with healthy lunches

Please can i have some healthy ideas for lunches in work? I have totally gone off salad and dont want to eat bread. One of our lovely hitchers have said that wraps are not that low in calories either ☹️. Dont mind ryvita/crackers etc. Quite lucky in that i have an oven, microwave, toaster and sandwich maker to hand.

When the winter arrives (have we even had summer??) jacket pots get thrown in the over and soup in the micro, but please inspire me for the next month or so, pretty please?? Thank you. x

    Cous cous salad? cook up a batch of cous cous the night before and chuck in whatever u fancy...peppers, cooked meats, sweetcorn and so on!

    same with pasta salads!

    Today I have a bit of a pick and mix, salad, salami, egg, pepper and pita bread dipped in tzatziki. Not sure how healthly it is because everything I thought I knew about healthyness appears to be wrong, but it's yummers and beats a soggy sandwich.

    Couscous is great, you can either make it the night before and have fried red onions and feta cubes with some veg (delicious) or just make it in the morning - this is really easy, just get a proper watertight tupperware, put in the couscous and a sachet of stock powder, boil some water, pour it in along with some frozen mixed veg, stir and put the lid on. It'll be cooked by the time you get to work and will last either in the fridge or out of it.

    i have these lined for breakfast tomorrow after not having them in years too!

    Always sounds bit weird if i say im having Cocopops for breakfast, as thats cats name ?

    A fav lunch of mine is roasted veg, cous cous ( quite often use half of an ainsley one) and feta.

    If you like feta, have you tried feta cheese pasta? I had it yesterday for dinner and brought the leftovers in for lunch.

    It's really versatile one-pot easy cooking, the recipe I'll type up below is the one I usually have but you can customise in all kinds of ways, e.g. my friend fries up some sliced pepper with the onions.

    • Boil a kettle of water and cook some pasta. Chuck in some peas (optional) when the pasta's almost done. Chop an onion finely while it's cooking.
    • Drain the pasta and peas and leave to one side. Return the pan to the hob and chuck in some FryLight (if you're being good) or sunflower/olive oil.
    • Fry the onions for a few minutes until they're soft. Chop the feta into small cubes.
    • Add the feta to the pan and let it melt to taste. I like to leave some chunks in there, or you can have it so it's almost all melted.
    • Chuck in some spinach leaves.
    • Add the pasta and peas from before and give it all a good mix. Let it all heat through for a couple of minutes and serve.

    Tesco and Sainsbury both do a half fat feta as well, if you are really trying to be good Smiley smile If you are ok spending money on lunch I really like the Innocent Pots. Or a cheaper option is the Food Doctor tubs. I really like the couscous and lentil pot, which is about £1.20 in Tesco.     I had a look on the BBC Good Food website and found some good ideas.

    Stir fry

    Baked potato with tuna/prawn/tinned fish and salad

    Tons of different salads

    Soups galore

    Wraps/bagels/pitta as a break from 'normal' bread

    Fruit salad

    Crudites and dip, such as homemade humous

    Natural yogurt and fruit handy for snacking on

    M&S do salads 3 for £3 so I have them a couple of times a week - I love the nutty grain and the goats cheese one with giant couscous,

    Today Ive had my homemade granola with greek yogurt & am having strawberries as an afternoon snack.

    Have you tried quinoa? you boil in water until it puffs out - like cous cous but its more protein than carbs. I add it to salads to bulk them out. Or you can boil in in milk & a little brown suger, add blurberries at end & et viola breakfast / desert,

    That's in the recipe I've suggested - you have it with courgette, chilli and feta. Delicious!
