Easy but yum shortbread recipe?

Does such a thing exist? I made some yesterday but it didn't taste right, there was something a bit... kind of bitter or sharp or something about it and it was a bit too crumbly - I wonder if I melted the butter too quickly?

Anyway does anyone have a fool proof recipe I could try?

    I use a recipe from Nigella's Forever Summer book and made some yesterday. I have slightly adapted it to make it even easier.

    100g cornflour
    100g icing sugar
    200g plain flour
    200g unsalted butter
    (seeds from a vanilla pod if you fancy - I prefer it without and use some vanilla caster sugar over the top)

    Sieve the cornflour, icing sugar and self raising flour into a large mixing bowl. Add the butter in cubes. I then use the electric hand whisk on a slow speed until it all resembles fine breadcrumbs (you do end up with a film of flour all over everything!).

    Pour the crumbs into a baking tray and press down with the back of a spoon. Then gently run a sharp knive through to make rectangles. You may have to press down again in some areas as it goes crumbly but they are still easy to slice when they come out of the oven. Cook at 160 for 20-25 minutes. Don't let them go too golden otherwise they are a bit hard. Leave in the tray for 10 minutes after they come out of the oven and then take out the rectangles and leave to cool on a rack. Sprinkle with vanilla caster sugar. When they are cold, I dip the bottoms in melted milk chocolate on about half of them and then leave to cool in the fridge. They are very popular in our house!!

    Oh decisions!! Thanks both. I think I saw the Nigella one F&G but was put off by the icing pods or whatever she was talking about as I didn't know what they were ?
