Foodies - Rabbit stew - anyone have a t&t recipe please?

I have the rabbit, and access to many hundreds of bayleaves ( I'm told that some recipes use about 20 or so?).

    I made a lovely rabbit stew recently, with cider and cream. I can't remember where I found the recipe - hold on...

    One i do is

    brown rabbit, remove from pan
    fry a chopped onion and some chopped celery and carrot
    put back rabbit
    stir in a tbsp of flour
    add a (glass) bottle of dry cider and a handful of bayleaves, S&P

    stir til it thickens a bit, put in oven, lid on for an hour and a half at about 160.

    another one similar to the above but skip the flour

    when taken out of the oven, remove the rabbit and veg to a plate, reduce the liquid by about half, add a heaped tsp of dijon mustard, and a small pot of double cream, bubble it all and pour over the rabbit and veg.

    you can do either with white wine - something like an alscace is good. you can use grain mustard instead of dijon

    sometimes i fry an anchovy fillet first, but if you do that, go easy on the salt.

    veg substitutes can be cabbage, new potatoes, and anything green really.
