gas vs induction (hobs)- help!

Easter, 15 October, 2008 at 14:38 Posted on Off Topic Posts 0 14

My mum is getting a new kitchen and is having a bit of a dilemma over what type of hob to have. The kitchen designer is pushing for induction and is a bit evangelistic about it - I've seen the demo and it's all very impressive but is it really that much better than gas?

I love my gas hob and don't think it can be bettered - especially for wok cooking. Mum currently has an electric halogen hob so either option will be a change for her.

I don't know anyone who has an induction hob so I don't know about what they're like for everyday usage - can anyone shed any light on the subject for me?

We have an induction hob. It is very responsive and there can be no loss of heat (and therefore energy) with them as they cook by pixies ferromagnetism. They also loook cool.

    Thanks Lois.

Can you preheat pans on them (ie griddle pans for steak etc)? I've heard that they cut out if the pan is empty but not sure how true that is?

I have an induction hob (which I had an absolute tantrum about because I wanted gas!), but I do love it - it boils water sooo much quicker, and the control is more precise (not that I do any kind of cooking that requires precise control?).

mine's a De Deitrich, which seemed to be the best around at the time, along with Neff.

I'm getting a new kitchen and have just chosen our hob. We're going for gas as i've only heard negatives about induction. My mil has an induction hob and hates it, says she'd go back to gas if she could but fil won't let her as this one cost so much. Also 2 kitchen designers we saw both rated gas over induction- can't remember why (i didn't pay much attention!). A tv chef also said they other day he preferred gas and couldn't understand why people had induction hobs.

Best thing is to go with whichever she prefers as she'll be cooking with it for a long time. Is it possibel for her to try out someone's induction hob to see if she likes it?

Since H has managed to almost ruin 2 saucepans leaving them on there with nothing in then I would say yes, you can preheat

    Thanks all!

Flump - She will be having Neff appliances so it's good to know that they're the best ones if she decides to go for induction.

Embie - unfortunately she doesn't know anyone who's got one so she can't try one out. We saw the boiling water demo at the showroom but that's not overly helpful really. I'm leaning towards gas being better for my mum and dad as I think it will suit the type of kitchen they're getting (handbuilt country/farmhouse style rather than modern) and my dad is completely dense when it comes to anything vaguely technological - I think it'd take hime aaages to learn to use it.

Lois - thanks, that's one to cross off the 'cons' list then!

As you mentioned wok cooking, I'd say only gas cooking is good enough for that IMO. I had halogen hobs before and they were fine, but not really on a par with the "real thing" when it comes to stir fry. A lot easier to clean though.

I'll have to admit that I'm old fashioned and got this from my Mum....

I'd go for gas because when if there's ever a power cut, you can still cook a meal....?

I definitely think they are better suited to a sleek, modern design, rather than country farmhouse stylee

That's the main reason I wanted a gas hob...

Thanks all for your input - given me lots to think about.

Can you tell that I'm reeeally jealous and am getting a bit more involved in this than perhaps I should? ?

Fully agree, and worked a treat for us when we were hit by Hurricane Ike and lost power. At least we could still have a cup of tea and cook! (although if push had come to shove we had the ring on the gas BBQ too)
