Gluten Free Christmas Pudding recipe

Marsie, 19 October, 2008 at 11:47 Posted on Off Topic Posts 0 2

Does anyone have any tried and tested recipes for a GF Christmas pud please? Wanted to make one for a friend whose husband is gluten intolerant.

Alternatively, is it as simple as replacing the flour and breadcrumbs in my usual recipe with gluten free ones - or am I over-simplifying?

Thanks,
M.

Not sure but how about Xmas pudding ice cream? You can either make your own vanilla ice cream or buy a very good one and then stir brandy-soaked dried fruit and nuts through it with grated orange rind and cinnamon and nutmeg etc. Don't have a recipe - normally do it and taste along the way!

I'm sure substituting with gluten free will be fine. i reckon the breadcrumbs are just in there to suck up the booze and melted suet.

I have never made a Christmas pudding (gluton free or not) so no tried and tested recipe coming from me. My son used to be gluten intolerant about 7 years ago and we used to make a lot of things ourselves as there wasn't the products in the shops back then.

I think it's worth a go with a normal recipe with gluton free flour/bread, but it's best to add a bit of xanthum gum as the gluten free flour doesn't stick/bind together so well and can be very 'crumbly'. It's been a long time since I cooked anything gluten free but I'm sure the xanthum gum was the bit that stopped it all falling apart - it sounds 'sticky'!
