Goats cheese recipes please!

I bought some goats cheese yesterday (the type with a rind on, looks like a camambert), and looking for ideas for what to do with it! I don't buy it often as H doesn't like it, so it'll be a treat for me, just meeeee!! ?

any suggestions?

    I just like it on bread, or toast, and then grilled.

    A local cafe does a lovely sort of quesadilla style thing - a soft flour tortilla, stuffed with chevre, gruyere, rocket and tomatoes, and then grilled, which is lovely. Or skip the tomatoes, and add toasted pinenuts.

    Or pull the potato out of a baked potato, mash in the chevre and then grill.

    We do a really nice pasta/gnocchi thing - roast a couple of peppers, some tomatoes and garlic, blend and pour over cooked pasta or gnocchi, then sprinkle plenty of chevre on top.

    How about grilling it whole and the plopping it on top of roasted vegetables and salad, and then drizzling it all with balsamic vinegar.

    We slice & grill the goats cheese and then serve with a salad of leaves, cucumber and cherry tomatoes. We make a dressing with pomegrante (sp) - crush seeds from half and mix with balsamic vinegar and sweetner then sprinkle a few of the pomegrante seeds onto the salad as well - one of our favourite suppers.

    I had a gorgeous goat's cheese salad in Ibiza - mixed leaves, goat's cheese, apple, walnut, small pieces of bacon and a honey dressing. It was superb!

    I have a lovely recipe that I do all the time:

    Halve some baby plum tomatoes, drizzle with olive oil and sprinkle with crushed garlic. Roast in oven for 30 mins. Spread pine nuts on another baking tray and roast in same oven for 5-10 mins.

    Whilst that's doing, boil some pasta and chop some fresh basil. Cube up your goats cheese. When everything's done stir the pine nuts and tomaotes in to the drained pasta, add the cubes of goats cheese and some black pepper, give it a little more of a stir so the cheese starts to go gooey. Serve and top with chopped basil.

    It's divine.
