Homemade Tomato Soup

How do you make yours? Am looking for some recipes to try if anyone has any favourites that they use or trial and error recipes i'd love to hear them please, thank you.

    Mine is:

    2 tins of tomatoes (@450g)
    1 med• onion
    2 cloves of garlic
    300ml vegetable stock
    3 tbsp sun dried tomato paste (or normal tomato paste)
    2 tbsp olive oil
    150ml double cream (optional)
    1 large handful basil leaves (sometimes I use pesto if no fresh basil)
    1 tsp sugar
    1 tbsp ketchup
    250g orzo pasta (or small pasta shapes - also optional)
    Salt and pepper to taste.

    1.Cook the pasta shapes according to packet instructions then drain and set aside
    2.Chop the onions and garlic into small pieces and fry gently in the olive oil till softened.
    3.Add the sun-dried tomato paste and fry for another couple of minutes.
    4.Then add the tinned tomatoes (chopped), vegetable stock, sugar and salt and pepper to taste. Let it simmer gently for about 30 minutes.
    5.Remove the saucepan from the heat and let it cool down slightly, then pour into a blender.
    6. Now add the double cream and the fresh basil leaves and blend till smooth and creamy.
    7.Pop it back into the saucepan with the cooked pasta shapes and warm through gently.
    8. Serve with an extra dollop of double cream and some crusty bread Smiley smile

    Mmmm that sounds really yummy, how many does that usually serve when you make it?

    Enough for 4 good sized portions (main meal sort of thing).

    it really is yummy! i forgot to add, sometimes I add a tsp of balsamic vinegar, but its not essential, you might need to adjust it when its almost done if you find it needs more salt/sugar etc... hope you enjoy it!

    Delia's roasted tomato and basil soup is lovely and very easy to make.

    AnnaBanana yours sounds lovely and I'll definitely be trying it. I will also second Delia's recipe, we modified that when we did it but I don't remember what we did differently. I'm sure the recipe as it is was great anyway! (I would not recommend Delia's onion soup ?)
