ideas for side dishes for easter

I am stuck and OH is no good at all at this.

We are having turkey, ham and new potatoes.

I know I'm doing cauliflower cheese and am trying out a braised lettuce recipe.

So the question is ... do I need another vegetable dish and if so what should it be?

something simple like glazed carrots, another proper 'cooked' thing like the cauli and lettuce.

all ideas gratefully received ? as I am just starting to put together the tesco delivery order.

    I'd say something quite light if you're doing another vegetable. My favourite is brocolli - you could have tenderstem brocolli. The minted peas suggestion also sounds pretty tasty.

    I love carrots, honey glazed usually are my favourite!! I find with carrots too if you have anyone that is fussy, then *usually* they will eat carrots. One thing I can't get enough of at the moment is carrot and swede crush from M&S, so tasty but I would imagine you can easily make it yourself too?!

    I love having creamed leeks with a special meal. Melt butter in pan, add sliced leeks and cook until really soft and melty. Add loads of black pepper and a glug of cream. Delish.

    Roasted carrots are always a winner, try sprinkling them with ground coriander its really nice.

    Broccoli or asparagus now its in season? Just steamed with a bit of butter.

    Kale is my current fave. Its really nice sautéed with bacon and onion. x

    I love roasted parsnips. We too have an Easter dinner but our is the same as Christmas dinner. With crackers and all.

    It was when I was growing up, my mum always did a massive roast dinner on Easter Sunday. We don't usually bother much now.

    We always have roast lamb rather than turkey and just do the usual veg that we have with any roast dinner. We might dress it up a little with a cauliflour cheese, but we've had that the last two sundays running so even that is just ordinary lol

    If you want something else, I would do carrots - as someone else said, even fussy eaters tend to like carrots

    Thanks ladies,

    As we are also celebrating our eldest rabbit making it to 10 ? I think I may go with some sort of carrot and do kale and leave out the cualiflower cheese as they are more rabbit themed (although obviously there will be carrot cake for pudding).

    I didn't realise not everybody did something a bit special on Easter Sunday but I guess it depends on whether you're religous or just enjoying spending time with family in which case... Easter, Christmas - all lots of food and laughter!

    Another vote for carrots! I also really like roasted parsnips, probably not very spring like but very tasty.
