Ideas for using up eggs!

I need to get through quite a lot of eggs in the next few hours, what can I make? I've already used 6 to make a batch of Nigella's fabulous brownies, and I had egg on toast for breakfast, but I still have to get through about 14 more. We're doing egg shell mosaics tomorrow and I need to get making and baking so I can free the shells without wasting the eggs. Inspire me....

    I'll second Fritatta - it's nice cold and will keep in the fridge for a few days I reckon. Would it freeze?

    Yes! Fritattas freeze perfectly well! I made one yesterday with spinach, smoked bacon and leeks and will be having the (very small) leftover piece today cold for lunchwith salad. Mmmm.

    Ooh Kegsey, those puddings look amazing. I like the sound of frittata too, and I could use the egg whites left over from the puds to make meringue. Yum.

    Eggs keep fine in the fridge for a couple of days. Or separate a few and make a soufflee for supper -- there was a good recipe in yesterday's Grauniad.
