Kitchen Knives - recommendations please

Can I have some recommendations please.

OH and I have decided that, with some of our wedding money, we're going to buy a really really good set of kitchen knives... But I do not have a clue what is good and what isn't. Well, I know what isn't..Ikea knives.

So, please can you recommend me some. I'm willing to pay a lot of money for them (within reason of course), as I'll be getting lots of use out of them.

    We have khon rikon (sp?) ones and Lakeland ones which are both brilliant.

    We have one Robert Welch one but they are a lot more expensive. We've got mostly odd knives as my brother works in Lakeland and is always bringing home new things to try!!

    Kuhn Rikon.

    We have these. They are scary to use. With one of ours, you can cut through the skin side of a piece of pepper with virtually no downward force apart from gravity. I keep meaning to see if I can slice something in mid air. Look fab as well.

    Haha not as far off as I thought. Our newest one is the tomato one. I'm too scared to use it!!

    We have global knives. Expensive but so worth it if you like cooking. Even if you buy only one knife!

    Have you considered buying individual knives? I've started to build up a decent set by buying the ones I really like for specific purposes. I tend to only buy knives in the sale and then I buy the best ones I can afford (as they'd usually be way out of my price range!)

    Yes, but I'm not really bothered about the price because they are literally the only thing we will be buying with our wedding money (the rest will go into savings). So if they cost £100-£200 then I'm willing to pay that - for a really good set.

    For £200 you won't get a 'really good set' though. You'll get some reasonable knives which will last you but if you want something really good, unless you buy them in the sale, they'll be a lot more than that.

    What do you want from them? How are you defining 'really good'?

    'Twas an estimate but yeah...

    By really good I mean chopping without any real effort. Like they do on the food programmes. They seem to chop an onion with little to no effort. With the knives I've currently got, I practically have to saw the carrots.

    Cricks is right. global knives for a set start at about £800 plus and can start at around 45 plus for one knife. Proper chefs knives are very expensive, but they do slice an onion nicely!!

    We only have 2 global knives but we use them for everything. Our block of knives look nice but they are just for show

    I think John Lewis & House of fraser & any of the big stores do global, also amazon do them. I would recommend you get a minosharp sharpener for them if you do, they are really good.

    Sabatier knives are also worth a mention slightly cheaper on the purse strings then global too.

    We have 2 kitchen devil knives and they are pretty good. Very sharp though. They were wedding presents.

    Another who couldn't be without Global, you can pick up a medium size universal knife for about 50 pounds - well worth it IMO.

    I bought a Khun Rikon knife yesterday as they had them in TK Maxx for £4.99 ?? Seemed massively cheap so I bought it and it's great.

    How long lasting are they?

    Something so cheap doesn't seem like it's going to be as long lasting as one that would cost, say, £50?

    I have three, at about £15-20 each, they are blisteringly sharp after 8 months (got them last Christmas). Which type did you buy? These knives are carbon steel blades (as opposed to stainless steel) - this means the blade can be sharper (and it will stay sharper longer) but they aren't as durable in terms of corrosion resistance i.e. they aren't going to last a lifetime.

    I bought the paring (?) knife - it said it was the best for everything so just bought that as a starter for ten.
