Leftover Pork Recipes Please

I have a shoulder of pork joint to cook tomorrow and I'm already wondering what to do with the leftovers. Apart from sandwiches, do you have any suggestions?

    How about shredded pork quesadillas, or again with shredded pork, pea and pork soup, or pork and lentil soup?
