Leg of Lamb?? WWYM

What would you make with it

i dont fancy making a roast dinner today and i have been given a locally farmed leg of lamb from my mate , i cant refreeze it and i cant think of what to make with it to have a tasty meal later this afternoon

    Do it in the slow cooker with moroccan spices maybe? Serve with some cous cous.

    I dont have anything like that here and it would mean going out to the shops which i am trying not to do as i want my fridge and freezer empty before i go away

    maybe i should have said that or should say what i do have in the house ?

    i am thinking now if i cut up veg all chunky and roast them in the fat with a bit of seasoning on them or would that be gross

    Ok, what have you got in the house??

    I don't really like vegs etc cooked in lamb fat but then I am funny about lamb fat generally?

    Ummmm not a lot at the moment my chest freezer is empty and the freezer in the kitchen has about a drwer full of ice for alchohol and some frozen chips , i think i have a bag of medettranian frozen mixed veg in there and a bag of cauliflower and broccoli , peas and chicken breasts

    i have the staple stuff like tinnned tomatoes , beans and stuff

    i think i better go shopping later today ??

    We're having leg of lamb today. roasting it directly on the shelf over a dish of dauphinoise potatoes and celeriac so the juices drip into that. we'll have that with some green veg. so the meat is roasted but its not a full on roast

    We had lamb this week with a bit of salad and some roast potatoes - it was lovely.

    In a roasting pan over garlic and rosemary, with garlic and rosemary on top, double wapped in foil, roasted for 4 hours.

    Yum.

    Its in the oven i will think of something later , i may do some sort of mash with onions and things in it
