Lemon Cheesecake

Has anyone got a tried and tested recipe?

I have promised OH that I will make one foe christmas and every recipe I have found is different. I think i have all the key ingredients but not sure which recipe to follow. plus i have a 9 inch spring form tin and most are for smaller tins. can i just sorta wing it? make a bit more chesecake topping stuff and use more biscuits?

    Cheese free cheats cheesecake?:

    One large carton double cream

    Tin of Condensed Milk

    Lemons!

    Biscuits (digestive hobnobs etc.) and butter for base

    Make whatever base you wish and chill. Whip cream lightly, add condensed milk and whip together, add juice of a couple of lemons and rind if you wish. Spread over base and chill. Couple of lemon rind curls to decorate.

    Easy peasy lemon squeezey!

    I've never added Philly as I thought it didn't really need it, but if you want to I'm sure it will be totally fine in it- and means it will contain cheese!

    The cheese cake is made and in the fridge. I REALLY hope it sets! I have used 5 lemons, condensed milk, lightly whipped double cream, and full fat philly. The base is digestives and ginger nuts with butter and a little honey.

    Well it ended up being very tasty but quite sloppy, got lots left. Anyone want some?

    Oh no, I think it probably was the Philly as the lemon juice sets the cream and I think by adding cheese there isn't enough 'setting power' usually that's where using gelatine etc. would be used along with it!
