Menu tasting - when to do it

I'm getting married at a venue which requires you to select a caterer from a list. There's one we'd like to go for, but do we have to hand over the cash or a deposit before tasting? I know tasting sessions exist but I've got the impression that that's after you've signed up, rather than before you part with your hard-earned cash. What has everyone else done?

We have to select caterers from an approved list & are planning to do a tasting before selecting caterer - this has been offered by the main caterer we are interested in. It is more likely you do the tasting nearer the date if you are having catering done by the venue.

We didn't get a tasting session. We chose what we liked the sound of and I can honestly say our wedding breakfast was the nicest meal I've ever had!

Our venue will be doing the catering, we are having our tasting next week, wedding is 30 May.
