Mexican buffet food help please

Hello,

My husband is having a 40th birthday party with Mexican theme. I am doing the food and would like to do Mexican food in keeping with the theme so would like some suggestions for what food to serve. We have food warmers availalbe so can serve hot food but would like a selection of hot and cold food. I also need to cater for vegetarians as well as meat eaters.

So what would you serve that is relatively easy to produce for large numbers of people?

Thanks in adavance, I will return but might not be immediately as the baby is wanting feeding!

    A basic meat and then veggie chilli

    potato wedges with spiced coating

    mexican vegetable rice

    From the websites I have been trawling through I would say that is about right! ?

    Chilli already on the menu although my husband wants three, a really hot meat one, a mild meat one and a veggie one. I am trying to convince him to just have a medium meat one and a veggie one. Potato wedges are a fab idea thanks.

    Four Tortillas - for inside do mince - side of salad and cheese

    Tomato, Onion, Coriander and lime salsa is very easy to make and goes with loads of things

    Quesadillas - you can add chicken or leave as just cheese. Can be fiddly to do for large quantities though (but go really well with the salsa).

    Refried beans

    Enchiladas

    And not forgetting lots of sangria!

    I love mexican food.

    How about flour tortilla's for people to make up wraps with, like chicken or beef, sour cream, guacemole (sp?), re-fried beans, and salad.

    Nachos,Tortilla chips with lots of cheese and sour cream.
