OM's- Cheese Towers???

Calling all the bitter OMs that had cheese towers instead of/as well as a wedding cake I have a quick question. (Those who are not bitter and those not having a cheese tower but just want to put their 2 pence worth in are also welcome)

I'm having a cheese tower (and a dessert table or wedding cake too I'm greedy like that)

Assuming the tower is stacked something like this

You have the obligatory photo taken of the 'cake' cutting then what did you do with it?

Just let guests hack away at at the hearts content? I'm feeling inclined to just do this although concerned upper tiers may end up falling on the floor as the bottom tiers get hacked away.

Have it taken away and cut up like a traditional cake? I am not really feeling this idea as would like guest to get stuck in themselves and also any leftovers wont keep as well are larger chunks.

Provide additional boards for the cheese to be cut on? I have a nice slate cheese board and a nice wooden board already so was thinking of possibly just having those next to the cheese tower so the tower can be dismantled and hacked without the risk of toppling.

Any words of wisdom?

    I'm bitter and twisted but think this looks LOVELY (I want!)

    Could you dismantle it into separte tiers after the ceremonial cutting?

    We had a regular cake as well, so any photos were with that. The cheese tower came out as a stacked pile, on a massive board with crackers etc. Guests soon had it disassembled! (I don't remember seeing a member of staff take it apart, although it WAS pretty late and I WAS pretty hammered). To be fair, our tower wasn't as big as the one you've flashed, so easier to move tiers around.

    Hi Funky, I'm not bitter and twisted yet...although it's only a matter of days!!!

    I am having a cheese tower (flash below...because I get married in 5 days and surely that's my prerogative?!), and I think the plan is to dismantle it. We have then bought little wooden heart shapes and will write the names of the cheeses on each so that everyone knows what's what. I would worry about it toppling if it was a free for all type arrangement, but then I am a bit of a worrier.

    We have also bought additional Brie, pate and mini pork pie slices, as well as the venue supplying breads, chutneys etc.

    How many people are you expecting in the evening? It might be impractical to leave it fully assembled if lots of people are trying to get to it?? I doubt that will be the case, just trying to think of all the alternatives.

    I'm not having one, I just looked cause I love cheese. I'm now having serious cheese cravings and am going to have to stuff myself with mature cheddar as that is the only cheese accessible to me!

    Thanks AC I think this is the most sensible idea I guess in my head I'm holding on the fact I want it to be a tower not a cheese board but I need to remind myself it is there to be eaten not just for aesthetics.

    Thanks Kells yes we all love a flash!

    We only having 50/60 eve so wont be as grand/tall as yours which looks fab btw So I guess around 6 cheeses and even that will be over kill

    I'm not switching to bitter until April but my friends had one at their wedding. They had a photo of it before everyone arrived at the reception and the official photos were of the actual cake cutting. The cheese towers got absolutely annihilated so there wasn't that much left over. My friends and I are utter cheese addicts, though. (On that note I would be very happy to take care of any cheese leftovers you may have ?)

    Well bearing that in mind, you might be OK you know - maybe just make sure you have a big enough space around it, such that if it were to have a little accident, it doesn't collapse onto anything else. I totally feel your pain though with regards to the dismantling; it seems such a shame.

    Is yours from the Cheese Shed? They definitely have a tower with a heart on top, which I think is so lovely.

    With regards to the VAST quantities of cheese, the supplier of the Brie actually phoned up to check that we hadn't made a mistake because we'd ordered so much...not embarrassing at all!!!

    My SIL had one aswell as the normal wedding cake. I dont actually remember them having any pics with the cheese one though.

    Theirs was left stacked on the dessert table, then later in the evening, the top tiers were put on a seperate plate. This stopped them falling off as the other tiers were eaten.

    They had quite alot left over though so we were eating it for days!

    The first flash was just a random cheese tower example we not fully decided which one we are going for yet (not getting hitched til September next year) but the one above is our front runner from the cheese shed although possibly that could change I love cheese but can never remember the names of the less common ones I try so the above is a pretty 'safe' option ....

    That heart shaped cheese (Godminster Organic cheddar shown on this pic as a round version is one of my all time fav chesses )

    There can never be too much cheese EVER no need to feel embarrassed ha!!

    Ours was taken away and re-laid out on cheeseboards, but not cut up. We had tiny slate blackboards with each cheese's name on as well.

    Ha Funky you are a boy after my own heart.

    I had three cakes - Englsih cupcakes, Macaron Tower and Cheese tower. How greedy is that? Food was so important to me at the wedding!

    Our venue cut ours up, otherwise I think it would have been CHEESE CARNAGE

    I didn't have a cheese cake but I am bitter and i do love cheese...

    So... I would do the separate cheese board thing. I like the idea of them each being on different boards with the name of the cheese.

    We're having a cheese tower, I hadn't even thought about the logistics. We're having one to feed about 180 people as well!

    I think I am aiming the FTLOMB method!

    Just as an FYI, I am getting my cheese cake from a local cheese shop and am saving around £100 on the cheese shed prices. Could be worth checking out?

    One wedding I shot spread it across 8 cheese boards and then guests cut it themselves on there. No queues and some took it to their tables.

    Yea we are either having a dessert buffet type thing

    or a 'wedding' cake more likely be a chocolate cake type i have my eye on this choccywoccydodah creation (although realistically this is huge for our numbers and not so keen on the roses)

    Not yet a bitter OM (334 days away... I have already warned OH of married life protocol) but my manager had a cheese cake. From what I remember, it wasn't dismantled by definitely hacked into. I am pretty sure the top layers came off worst, as she recently mentioned finishing off the cheese that she had frozen from her wedding day.

    Mmm.... cheese.... It was a good cake. Muchos brie
