OM's- Cheese Towers???

Calling all the bitter OMs that had cheese towers instead of/as well as a wedding cake I have a quick question. (Those who are not bitter and those not having a cheese tower but just want to put their 2 pence worth in are also welcome)

I'm having a cheese tower (and a dessert table or wedding cake too I'm greedy like that)

Assuming the tower is stacked something like this

You have the obligatory photo taken of the 'cake' cutting then what did you do with it?

Just let guests hack away at at the hearts content? I'm feeling inclined to just do this although concerned upper tiers may end up falling on the floor as the bottom tiers get hacked away.

Have it taken away and cut up like a traditional cake? I am not really feeling this idea as would like guest to get stuck in themselves and also any leftovers wont keep as well are larger chunks.

Provide additional boards for the cheese to be cut on? I have a nice slate cheese board and a nice wooden board already so was thinking of possibly just having those next to the cheese tower so the tower can be dismantled and hacked without the risk of toppling.

Any words of wisdom?

6 page thread, I was expecting some drama but no!

However, much talk of cheese (preggo lady misses Brie) and another flash of those fab sparkly shoes... ?

As for the actual question, I'd have it stacked, get photos and then have the tiers dismantled and put on separate boards for the guests to hack into.

It's so lovely to have this long a thread for something like this, rather than it being a battlefield!

    Absolutely this.

Would have loved a cheeseboard but alas funds didnt allow. I would maybe get your venue to dismantle so you can enjoy your day.

PS What is your actual date?

Funky - I am well impressed.

Now I hope you don't take this the wrong way in thinking that I think gay men are just interchangeable accessories but... well, I kind of wish I could swap my GBFs for you and your partner. You seem much more... fabulous than them. They are the most straight acting gay blokes, wouldn't know McQueen shoes if it kicked them up their jacksy and have no wedding ambition at all. They have told me if ever they get hitched they will just go for maybe 'a register office' then a week in Sitges. I am really annoyed that they won't diva it up and let me be their glittery bridesmaid.

Everything looks amazing, I can't wait for this report!

Funky, we had a MASSIVE cheese cake at our wedding, over 11kg of the stuff. We cut it as you would a cake and then it was cut in to large pieces and distributed across 10 olive wood cheese boards that my dad made and engraved with our names at the dates.

A board was put on each table (as well as a couple at the bar) and served with a bottle of port so people could help themselves.
