Oven baked risotto

Has anyone done this and got a recipe they would recommend? How does it compare to a traditional risotto? Both in terms of taste and time to prepare / make?

    I do them quite often now. They're not as creamy as proper risotto, but it's an awful lot easier if you're busy. When I have time I really like cooking risotto properly (glass of wine in hand) but if not, I tend to use the proportions and timings in Delia's Carbonara risotto. I do rather like that recipe when I'm in the mood for a complete stodgy carb fest, but it is rich, so usually I adapt it for a normal one.

    Thanks - I will see if I can find that thread (although I struggle to get the search to work at the moment) and if not I will check out the delia and bbc websites.

    Hazel - I love making them the 'proper' way but just find it is taking too long in the evenings once G is in bed and that we are eating too late, so wondered if the oven baked way was quicker.

    Thanks Peaches. I saw the first one and like the sound of it but I don't think it is going to save me much time. I think I will try it anyway.

    I threw some other stuff in as well, just some pepper and mushroom, plus a pinch of crushed chilli and some mixed herbs. it was stonkingly good. In fact I might make it again tonight.

    Ooh - that's tonight's tea sorted! H loves risotto but I hate making it (get bored easily) so this should be a good compromise ?

    Have to agree with Hazel on Delia's risotto - it's absolutely gorgeous... We've made it dozens of times with 100% success so if you are a bit nervous it's a great one to start with.

    I feel your pain on this one ?

    I don't think the oven baked ones are quicker in terms of total time but you can do other things while they cook so you save time elsewhere

    We've just finished eating the Good Food one - it took 10 minutes longer in the oven than stated (but that was probably down to the extra ingredients I added) but otherwise I'm happy to report a tasty success!
