Pasta Recipes...

I fancy doing pasta tonight - any good recipes?

Something quick preferably. I do Pomodoro and a bastardised carbonara a fair bit so neither of them!

    I do a chorizo pasta....

    -fry a chopped yup onion and aroundn 100g-150g of chorizo in a frying pan

    -add in tin of chopped toms

    -add in around 200g of DRY pasta

    -add in 500ml vegetable stock and stir together

    - add in paprika and around 4 lidfuls of balsamic vinger (or to your taste) and salt and pepper

    -tablespoon or so of tomato puree

    -stir well and leave bubbling for around 20mins until pasta is tender!

    Sounds good flow, I never thought of cooking the pasta IN the sauce.

    I usually just chuck a load of veg and a can of tomatoes in a frying pan then add to the pasta, and bake with cheese on top for ten minutes.

    Or mix some parmesan with an egg yolk and water from cooking some spaghetti and mix together with bacon, peas and the spaghetti. I think that was a Heston/Jamie Oliver recipe, can't remember. It's good though.

    The most adventurous I get is a cheese sauce!

    I have a little recepie book full of pasta sauces but I font think Ive ever made one of them!

    tis amazing, served with some cheese and tomator flatbread, yummers!! you do have to watch it tho make sure you stir it as it can stick to the pan if its too hot

    HAG - instead of doing the old egg yolk and cheese carbonara recipe i mix cooked pasta with creme fraiche and cheese and add bacon. Its yum!

    You could add smoked salmon, creme fraiche and dill or tuna, sweetcorn and cheese?

    My very simple recipe:

    Boil pasta twists

    Stir in green pesto

    Lob chunks of feta cheese and cherry tomatoes on top.

    Sprinkle toasted pine nuts on it.

    EAT!

    Ouh tasty!! Good idea! I'm always scared of scrambling the egg by accident. What cheese : creme fraiche ratio do you use?

    Very similar to what Flow has but we tend to use Pepperoni as it dosent disappear as much once it has been cooked, I often add a smiggen of sweet chilli sauce.

    Last night I did pasta with bacon, broccoli and pesto. Was yummers. Just add chopped up cooked bacon & steamed broccoli to the cooked pasta, and stir in some pesto.

    The nicest pasta dish I've ever had was on holiday in Jamaica - strips of steak in a peppercorn sauce. I've recreated it at home with a sachet of ready made peppercorn sauce. Not exactly the same but it was pretty good and a nice change from your usual tomato or cream based sauce.

    I also like anything with a philadelphia base - tenderstem broccoli or leeks are nice. Maybe with some crispy pancetta. mmmmmmmmmm!

    I shouldn't be in this thread, my pasta 'dishes' always look like vom Smiley sad yet I try so hard!

    Evidence of this can be found in HT cooking disasters thread- I would not look before your dinner tho!

    I do a spaghetti pasta with feta, courgette & sundried tomoto.

    I cook the pasta normally & steam courgette & carrot strips (carrots for 8 min, courgettes for 3 mins).

    Once everything cooked I stir it all together with a tsp of olive oil, add sundried tomatos and sprinkle the feta cheese.

    Cook in oven for 10 - 15 mins. This melts the cheese and creates a kind of sauce so the pasta isnt dry, I usually make enough for 2 nights.

    Im sure it would work well with chicken added!

    Yep, pesto pasta is great and so easy - miscellaneous vegetables covered in pesto, plus olives and feta Smiley smile
