Polenta

I bought some as I'd seen a recipe on the TV using it. Can't remember what it was now so inspire me please!

    Hmm. I saw a great recipe for polenta croutons a while ago. Haven't tried it yet though.

    Chips? Lemon polenta cake is supposed to be nice but I havnt tried it myself. No recipes I'm afraid, just google for ideas Smiley smile

    Its quite bland, so add stuff to it.

    You can have polenta soft / wet, like a mash substitute or firm like chips. Wet, you just mix it hard and serve, firm you leave it to cool down in a tray, til it firms up, then slice and pan fry it to crisp the edges.

    Either way, chuck in a shitload of parmesan and it will be laaaaarvely. I had it in an Italian restaurants with mixed wild mushrooms on top, wild garlic and a little bit of chilli. Handsome.

    You can also use in cakes, or as a crispy coating in lieu of breadcrumbs.
