Puddings for the lactose and gluten intolerant

We're having friends round for dinner on Saturday and one of them is intolerant to gluten and dairy. We've got the rest of the menu together (smoked haddock and cauliflower soup followed by duck tagine which he can have with rice and the rest of us will have cous cous) but I'm really struggling on pudding. Any suggestions - I'm presuming it needs to be something primarily based around fruit but I'd like to make it a bit more interesting.

    My sis is lactose intolerent, one of her favourite puddings is baked peaches with amaretto... cut peaches in half, place face up in a ovenproof dish, sprinkle liberally with amaretto and then with vanilla sugar and then bake in a hot oven until soft, and then serve with soya cream.... real cream for those that can! hth...

    Apple crumble made with gluten free plain flour and flora white for the topping. My MIL is dairy and gluten free, and I find that one really easy.
