Quick (lazy) side dish for a barbecue

bostongirl, 10 June, 2008 at 20:29 Posted on Off Topic Posts 0 9

Help....I need assistance from the Hitched chefs....

Its the 'back alley barbeque' on the street we have just bought a house (but not moved into) tonight at 7pm.

We've only just decided we are going as H had to rearrange his schedule as he had double booked.

Instructions say bring something for the grill and a side dish to share.

Its 3.30 pm, its over 90 degrees in here, I am 38 weeks pregnant and hot and tired and the last thing I fancy doing is cooking. I also have a 30 min conference call at 5.30 pm and a ton of work to do (working from home).

I'll have to walk down to the local small overpriced supermarket. I'll get a burger for H and a veggieburger for me for the grill.

Any ideas as to what I can take for a side?

It can be appetizer, side or dessert - the key thing is that it requires minimal effort on my part, but doesn't look like that is the case as this is the first time I will be meeting many of our new neighbors so I need to look like a domestic goddess (or at least not a lazy person!).

The supermarket has a reasonable selection, particularly of 'fancy food'

I thnk the heat has fried my brain - all I can think of is veggies and dip, but I'd like to do something more imaginative.

Any quick, easy ideas? Thanks!

Could you do a nice potato salad? Adding pancetta and some wholegrain mustard? Or if you want to take something sweet you could whip up some fairy cakes/cup cakes/muffins?

Although if you're 38 weeks pregnant, I'd be inclined to buy some posh ice cream and tell them to deal with it ?

I'm thinking of something delish like mixed couscous or rice with veggies and pomegranate - just chop and chuck. Bingo.*

*I have never cooked this, a chef I knew used to make it for me. It was very nice ?

    thanks all.

This one is jumping out as I have a packet of toasted pine nut couscous (which is probably a hitched sin in itself ?) and it will only take 5 mins to cook.

So, what can I chop and chuck in with it, and what do I need for dressing on it?

    Sticky Sausages...

Put loads of cocktail sausages in a casserole dish, mix in a jar of sweetcorn relish and a jar of tomato relish. Cook in oven for about 30 mins. Leave to cool and hey presto - the yummiest side dish for a bbq

Ah, that's perfect...I have mint in the garden, the cous couse already has pine nuts in it, and I know I can get fennel and dried cranberries and it doesn't even need cooking! Will have to skip the za'tar as I don;t know if I can get that, but it says thats optional anyway!

Thanks... that meets my 'can be made in 10 mins without turning the oven on' criteria.

Well, I made it, despite having to walk to the shop twice as when I went to harvest the mint form my herb box, on closer inspection it turned out to be basil (H planted the herb box, and I was looking at it from across the patio when I decided it had mint in it)

It came out really well. I didn't have the za'atar, and used cranberries insted of pomegranite.

H didn't see it until the party as he was out, so he didn't know I had made it. At the end when we were collecting out stuff, we went up to the table and he pointed it out and said "did you try that salad - it was really good". Yes honey that's the one I made!

So it got a definite thumbs up from him!

How about chorizo and potato 'salad'. So easy. Boil some halved or quartered new potatoes, fry off some chorizo till its nice and browned, add the potatoes and a can of cannelloni or haricot beans and some snipped spring onions. Mix and fry for approx 5-10mins. Hey presto.

    SO tasty.

Alternatively, buy a nice cake and pass it off as your own.

Ignore me! That's what you get for not taking notice when the original post was lol
