Recipe Inspiration Please

Ok my mind has gone blank, I want to cook something tonight that fits within the following parameters:

  • Less than an hour for preparation and cooking (ideally)
  • Easily obtainable ingredients from small supermarket
  • Looks more impressive than it is (😄 Yes, I am feeding my ego too!)
  • Has meat or fish in it
  • Does not contain any of the following: rice, cheese or banana
  • Fits the weather - the first person to suggest salad gets a poke in the eye

Please help me otherwise I fear I may cook this and then you can all deal with the repurcussions when I share them on Hitched! 😆

    Why don't you do something simple but tasty, like minted lamp chops, mash, greenbeans and gravy?

    Or a roast chicken with ciabatta bread, OO for dipping, and a big salad?

    Fresh mussels steamed with onion, garlic, celery and white wine served with chips or bread - not always available from small supermarkets though

    Coq au vin, but might not suit the weather at the moment

    Fishcakes - I did this one last week. Easy to do but effective.

    300g fish fillets (i.e. cod, haddock, salmon) chopped roughly
    100g frozen prawns, thawed
    1 tablespoon of red curry paste
    2 kaffir lime leaves, finely chopped (optional)
    small bunch fresh coriander
    1 teaspoon salt
    100g green beans, chopped finely
    2 tbs oil for frying

    For the dipping sauce:

    2 small cucumbers, quartered legnthways
    1 small red or green chilli, de-seeded and sliced thinly
    1 1/2 tablespoon sugar
    3 tablespoons rice or white wine vinegar
    1 tablespoon roasted peanuts
    fresh coriander leaves, to garnish

    1. Put the fish. prawns, curry paste, lime leaves, corriander and salt in the food processor and process to a fine paste. Add the beans and pulse to mix in. Turn out in to a bowl and refrigerate for up to 1 hour.

    2. Meanwhile make the dipping sauce. Slice the cucumber and put into a bowl with the chill. Combine the sugar, vinegar and 1 tablespoon of water in a saucepan and heat until the sugar has dissolved. Cool and pour over the cucumber. Spoon into little dipping bowls. Chop the peanuts roughly. Sprinkle on top with the coriander leaves.

    3 With greased hands shape tablespoons of the fish mixture into small patties. Heat the oil in a frying pan and fry for 10 minutes on each side until golden and cooked through. Lift out with a fish slice and drain on kitchen paper. Serve with the dipping sauce.

    Serves 4.

    Hole you said the salad word!

    Actually I like the idea of a roast - I haven't had one in ages. I could do beer chicken or something, mmmmmmmmmm.

    Oooh thanks all, they all sound lovely - I am very tempted by proper Shepherd's pie too, I did that Delia recipe before and it turned out really well. Mmmmmm.
