Recipe sharing

Who fancies sharing one of their (or pinched) recipes once a week? I was thinking on a Friday we could each post a recipe and report back with pics (if you want?)

I want to get everyone cooking! I know it's not everyone's cup of chai, however thought some of you might be up for it?

    I'm up for it but never measure anything / know what temp the oven should be at / how long it cooks for etc - my cooking is always trial and error that comes out well!

    Favourite winter warmer for me at the moment is pork chops cooked in apple juice with an onion and a chopped up apple in it. Once the chops are cooked, take them out to rest and add creme fraiche to the remaining apple juice and apples. Stir in and warm then serve over the pork chops with mash. Yum!

    I think this is a really good idea. I had a recipe sharing email recently, where you add your name to the list, send your recipe to no 1 on the list and supposedly get about 20 recipes back.................but so far I've had none!

    I shall start off - here is the lemon drizzle recipe. So, so easy and yummy too.

    Ingredients

    225g unsalted butter at room temperature, 225g caster sugar, 4 eggs, finely grated zest 1 lemon, 225g self-raising flour.

    For the drizzle topping The juice of 11⁄2 lemons 85g caster sugar

    Method:

    Preheat the oven to 160 degrees (fan oven) or 180 degrees for a conventional oven.

    Cream the butter and caster sugar together. Add the eggs one by one and mix together well (easier to do this with a hand blender). Add the flour & lemon zest. Mix and put into a lined loaf tin. Cook for 45 - 50 mins until a thin skewer inserted into the centre of the cake comes out clean.

    Prick the cake all over with a skewer then pour the drizzle topping on top. Leave to cool and munch away!

    I'm in!!! its like virtual feeding ?

    I am planning on making flapjack tomorrow, not very inspiring I know, but it has been requested of me so any excuse for a bit of baking! Will flash pics and post recipe once baked! I am also thinking of making jam/chutney to start off my xmas hampers but this is a whole new cooking adventure for me and really depends on me gettin off my backside and going to buy some jars! will be very pleased if successful so will post some proud pics lol x

    I knew you'd be a good candidate Nabs! I am going to be making millionaire shortbread, coconut ice and other sweet treats for Crimbo so will post those recipes and pics too.

    I'm toying between my favourite slow roast lamb and pork recipes (idiot proof and guaranteed omnomnom-ness) or a super quick and healthy fish and noodle parcel malarkey.

    I cannot bake for toffee though.

    You're on! The last (and first) time I did the shortbread it went really crumbly. I think I may have cooked it for too long as it all fell apart.

    This is one which I have not tried yet but did recommend to another hitcher

    Fudge

    3oz full fat cream cheese

    12 oz icing sugar

    1 level tablespoon cocoa

    cream all the above together

    melt 3oz plain chocolate with

    1.1/2 oz butter

    beat both mixtures together, spread evenly into a tray, put in fridge for about 2 hours, turn out cut into squares and refrigerate for further 2 hours( I never leave it this long!)

    Sometimes add fruit or nuts when mixing both mixtures together

    Recipe also says eat within 3 weeks!

    Cake:

    Butter for greasing

    1 3/4 cups plain flour, plus more for pans

    2 cups sugar

    3/4 cups good cocoa powder

    2 teaspoons bicarbonate of soda

    1 teaspoon baking powder

    1 teaspoon salt

    1 cup buttermilk, shaken

    1/2 cup vegetable oil

    2 extra large eggs

    1 teaspoon vanilla extract

    1 cup freshly brewed coffee

    Preheat the oven to 350 degrees F. Butter 2 (8-inch) round cake pans. Line with parchment paper, then butter and flour the pans.

    Sift the flour, sugar, cocoa, bicarbonate of soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely.

    Place 1 layer, flat side up, on a flat plate or cake pedestal. With a knife or offset spatula,

    spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake.

    Icing:

    6 ounces good semisweet chocolate

    1/2 pound (2 sticks) unsalted butter, at room temperature

    1 extra-large egg yolk, at room temperature

    1 teaspoon pure vanilla extract

    1 1/4 cups sifted icing sugar

    1 tablespoon instant coffee powder

    Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature.

    In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on

    medium-high speed until light yellow and fluffy, about 3 minutes. Add the egg yolk and vanilla and continue beating for 3 minutes. Turn the mixer to low, gradually add the icing sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy. Dissolve the coffee powder in 2 teaspoons of the hottest tap water. On low speed, add the chocolate and coffee to the butter mixture and mix until blended. Don't whip! Spread immediately on the cooled cake.

    I think Im onto a winner with this one then hehe! I found I didnt need to cook it for as long as it said on the recipe tho, the recipe i use has semolina in the base which gives it a really nice short texture but without it being too crumbly

    Loving the receipes and Rae like the sound of the pork. Have none in at the moment so will have to get some

    I have just created a folder list at work called receipes keep them coming when the hall is finished will have to get some baking done for xmas

    We should have a sticky with a main meal and desserts. So if we are not sure what to cook one night instead of going on the net ie to bbc food. We can come on here for tired and tested rceipes

    Here's my current fave.....haven't had a chance to take a pic of it yet (as it gets eaten by H too quickly!) - for best results use an electric whisk, makes the sponge all light and fluffy!

    CHOCOLATE VICTORIA SPONGE

    Ingredients
    225g butter (room temperature)
    225g self raising flour
    225g caster sugar
    2 tbs cocoa powder
    4 eggs
    Frosting
    250g icing sugar
    80g butter at room temperature
    25ml milk
    80g of Nutella or another hazlenut and chocolate spread
    1. Preheat the oven to 180c/Gas mark 4
    2. Cream the butter and sugar together until light and fluffy.
    3. In a separate bowl beat the eggs together and then add them gradually to the creamed butter and sugar, mixing well as you go.
    4. Before adding the flour remove 2 tbs of flour and replace with the 2 tbs of cocoa powder. If you want to make a plain vanilla Victoria sponge omit this step and the cocoa powder.
    5. Add the flour and cocoa mix and mix together well then divide the mixture equally into two baking paper lined and greased cake tins and make sure the mixture is level.
    6. Bake for 25 - 30 mins or until a skewer pressed into the cake comes out clean. Turn the cakes out of the tins and leave to cool on a wire rack.
    7. For the frosting beat the icing sugar and butter together using an electric mixer.
    8. Turn the mixer down to a low speed and add the milk, once it is incorporated turn the mixer up to high and continue beating until the frosting is light and fluffy.
    7. Stir in the nutella by hand and then use half the frosting to sandwich between the two cakes and the other half to top the cake with.

    Well I made my flapjack and also some rhubarb, ginger and date chutney and took pics but havent put them on my computer or remembered to bring the recipes to share, doh!! so will update with pics and flapjack recipe soon but will not post the chutney one until I know it has worked, tis my first chutney attempt and Im not convinced at the mo but is supposed to be better after you leave flavours to develop for a few weeks!?! fingers crossed for that!!!

    I made an apple, sultana and cinnamon crumble yesterday, but it was eaten too quickly for me to get a picture of it! Was very nice though. Will post the recipe tonight if I can.

    Here is my flap jack recipe and after seceral unsuccessful attempts at flapjack (I mean seriously with so few ingrdiants I have noi idea how it went so wrong) this one has so far been foolproof!

    550g oats (the cheap own brand ones, my tesco finest ones didnt work ?

    300g butter

    8tbsp golden syrup

    100g sugar

    preheat oven to 180 and butter a baking tray

    put butter, syrup and sugar in a large pan over gentle heat, stiring until butter has melted & sugar has dissolved

    add oats to pan and mix thoroughly, pur into baking tray and spread out, bake for 15-20 mins (recipe sys 20 but mine are always done at 15!) until golden.

    take out of oven and leave for 10 mins, then score into pieces, leave until completely cool before cutting and removing from tray


    And here is my questionable chutney

    Cheese and thyme biscuits (WARNING - these are seriously delicious and disappear in an instant!)

    50g unsalted butter at room temperature

    115g grated cheese (I find half mature cheddar and half medium works best)

    1 tsp English mustard powder

    pinch of salt and pepper

    100g plain flour

    1 tsp dried thyme or 2 tsp fresh thyme chopped

    METHOD: Blend the butter & cheese together in a bowl. Add everything else and form a dough (takes a lot of squishing the mixture together with your hands) Roll the dough into a thinnish log/ sausage type thing about 2 - 3 cm in diameter. Wrap it in cling film (find it's easier to roll it out in the cling film) Chill in the fridge for at least 1/2 an hour. Preheat the oven to 180 degrees or gas mark 4. Line a baking sheet with greaseproof paper. Unwrap the dough and slice into 5mm slices. Bake for 10 - 15 mins until golden.

    My other recipe from the weekend was a lovely Beef Goulash - perfect for this miserable weather we are having at the moment! You can serve with rice, pasta or potatoes - we had it with mash yesterday and it was scrummy!

    If like me you are trying to lose a few pounds it is perfect as it's a Slimming World recipe ?

    Serves 4

    500g Braising beef

    1 1/2 tsp Paprika

    1 tbsp Tomato Puree

    2 Garlic cloves (crushed)

    1 Onion roughly chopped

    400g Mushrooms

    1 x 283g jar of flame roasted red peppers in vinegar, drained and chopped

    2 tbsp bovril concentrate or beef stock in 1/2 pint boiling water.

    Method:

    Preheat oven to 180 degrees/Gas 4.

    Brown meat in a pan and then transfer to oven proof dish or slow cooker.

    Cook onion for 5 minutes and then add mushrooms and garlic and fry for another 5 mins. add paprika for the final minute.

    Transfer all to the oven pot or slow cooker.

    Add all other ingredients to the pot.

    Cook for 2 1/2 hours in oven or as long as you like but at least 10 hours in slow cooker!
