Is it the 'done' thing to sign up to multiple recruitment agencies when job hunting or do you normally just sign up with one?

I wasn't sure if jobs are often advertised through multiple agencies, in which case just being with one should be sufficient or if I will miss out on good positions by doing that. It is a permenant job I am looking for in accounting / finance.

Definitely multiple. A lot of companies just use one agency.

If you sign up to multiple you risk your cv being sent by more then one agency. A decent consultant will not just send your details to a 'live' job they will go out and seek the right opportunity for you

I know the consultant I am seeing tomorrow has approached a few firms she thinks may be interested in me, but I saw another job that i liked the look of with a different agency and was debating when to make contact on that one as well.

Definitely make contact with more than one agency, the worst that can happen is that your CV will land on someone's desk twice, and that's not a problem for you but for the agency. We recently did a huge recruitment campaign involving 3 agencies and two websites, we received upwards of 50 CVs and not one of them twice!
