Slimming world green day lunch?

I've got friends coming over for lunch on thursday - one is veggie and one doing slimming world. I'm thinking red days are meat so it's best if I ask her to be on a green day?

If so does that basically mean carbs and veg?

So I could do a pasta salad or um, bread and salad. Anything a bit more inspirational you can think of?

    Sounds like a green day would be your best bet. Any pasta / tomato based sauce is good, big green leafy salad things good too. Probably avoid bread (but make it wholemeal if you do have it as she coyuld count it as healthy extra for fibre). Or pasta bake-type dishes are good - with sweetcorn etc. I mayh have some recipes if you want a look - just PM me with your email addy and I'll send some across.

    Just been for a lovely buffet lunch at a SW friends house...6 of us on SW!

    There was...

    Cold golden rice (Just the Batchelors one...she said she ran out of enthusiasm and cheated! But it was nice!)

    A pasta salad with fat free italian dressing on it

    Potato salad (think she used a fat free from frais for the dresing)

    Coleslaw (she made it with fat free yoghurt)

    Stuffed peppers (Ainsley Harriet cous cous in it, but you could do your own)

    And obviously salady stuff

    Huge salad sandwiches with quorn sandwich meat, (use nimble bread - 2 slices are 1 HE B, use laughing cow light cheese triangles instead of spread -you can have 5 of these and 1 HE A or B but you'll only need 1 for 2 slices of bread.) Do potato wedges or SW chip with it.

    Or a veggie fry up, Quorn sausages (free), scrambled eggs (part of HE for the milk), grilled tomatoes (free), baked beans (free), mushrooms (free) toast using nimble bread and Laughing cow light triangles.

    or make a soup, theres a lovely recipe for a scotch broth one, its in one of my books ifyou want it. It;s got pearl barley in so it's quite filling.

    If you're doing scrambled eggs, you don't need milk. Save it for your coffee or whatever! Tastes yummier and richer without milk, for sure!
