Green/EE day
My other half loves this recipe, and we make it with sausages. It's easy peasy, yummy and filling:
Serves 4
8 sausages (low syn)
1 tin of baked beans
5-6 potatoes
1. Peel potatoes, boil/steam and make into mashed potato.
2. While potatoes are cooking. Grill sausages.
3. In a cassarole dish, add the cooked sausages and baked beans. Top with mashed potato
4. Place in oven 200 C, for 30 to 40 mins. Place a tray under cassarole dish as bean juice may bubble over sides.
NB. We also sometimes add fried onions (fried with light oil) to the very bottom of the cassarole dish for added flavour. Yummy!
On a green day, the potato and baked beans are free, so you only need to count the sausages if they are not syn free sausages!
