Made this the other night and it was delicious!!!
Prep time - 10 minutes
Cook time - 15 minutes
Serves: 6
Ingredients
600g linguini
2 packets of Tiger (big) prawns (HE/Syn)
Juice of 1 lemon
1 clove garlic diced
Fry light
180 g Philadelphia Light with Garlic & Herbs (HE/Syn)
4 sprigs of lemon thyme, leaves picked off
Cook the pasta according to the pack instructions. Heat a frying pan with the oil in it, add the garlic and cook gently so as not to burn it. Add the Philly and lemon juice and a few spoons of pasta water to make a sauce consistency.
Add the prawns and thyme leaves, to the sauce. Cook on a gentle heat for 4-5 mins until they are heated through. Season to taste.
Divide the pasta between 6 plates and top with the sauce.
For 2 people I just halved the recipe (but kept the whole clove of garlic). Made a decent amount, and we ate the whole lot!
