When i first came on here, I had the option to make text bold/italic etc, add URL's etc but those options appear to have gone... how can I get them back? I can't even add paragraphs now?!?

Yeah I know, no I am on a Mac. The options for changing the text are no longer there!?

At the top of the page where it says your username, click Edit. Click on Forum Preferences then Site Preferences. There will be a drop down box called Content Editor. You are probably on plain text, try standard or enhanced for further options. I think it has to be plain text if you want to post from an iphone, but you do get this ugly big text. Hope that helps.
