Tonight's Dinner?

Gracey, 28 January, 2014 at 20:36 Posted on Off Topic Posts 0 20

Just wondered what everyone had for dinner tonight, we probably only have about 7-8 different meals over a couple of weeks rather than a different thing day to day to day, and so as much as anything it was for inspiration for me ? we had chicken Kiev, chicken-mozzarella ravioli and roasted asparagus (yum my fave!) a bit of an odd selection but it was what we had in the fridge, quite tasty!!

We had a filo parcel stuffed with mushrooms, leek and gruyere, asparagus and mushrooms stuffed with shallots, garlic, philadephia and parmesan. It was cheese and mushroom heavy but I loved it!

I made a honey pork stir fry! I'm a rubbish cook but it was delicious and very easy to make and 3 hours on I'm still proud of myself for it!

The filo parcels come courtesy of Mr Tesco so you can try them for yourself! They stuffed mushrooms were made by me though as I had some philadelphia left over from the cake making at the weekend. I have never done them before but I would definitely do them again.

Yep! It's actually Diet Coke chicken but we only had Pepsi Max in the fridge. It reduces down to a sticky gooey sauce, it's a Slimming World favourite, I've been meaning to try it for months...Google it! I made it with noodles and stir fry veg.

I had a couple of potato cakes and half a bag of mini eggs. Not so healthy or nutritious but yummy.

I had chicken Katsu curry, admittedly I didn't make it but it's what I had for tea. I also had coconut prawns. It was all amazing.

Last night was Vegan sausages with mash and beans.

Tonight's offering is I think, Mexican Bean Burgers, Potato Waffles (I haven't checked if they're vegan I hope so, or I will go without) and something else, veg probably.

Some of those sound really nice!! I am a bit limited on some of the thigs - I wouldn't class either of us as fussy but I don't really eat fish, and OH doesn't eat peppers or mushrooms (dire rear consequences lol!!) but we do quite often have veggie sausages or burgers with beans or vegetables. Rarely do we 'make' stuff through lack of time mainly - ie curry would be leftovers plus a jar of sauce for example!! Tonight I think we are going all out and having burgers chips and beans ?

Tonight I'm having beef casserole, it's been in the slow cooker so I'm hoping it'll be delicious.
