Ours (brother, brother in law) did mostly boring jobs - helped people find the loos, stashed presents, did a bit of waitress service if necessary, hunted around for people needed for photos, and so on. We didn't have a very formal ceremony, so no need for them to organise seating or owt.

You don't need them, but they can be a bonus as helpful hands who can't turn you down when you ask them to do something!

I think they were traditionally to usher people in to the ceremony room and out again.

Nowadays I think people use them as 'free' labour to help the day run smoothly. I know I will be ?

I used mine to help guests sit in the chapel, put out the pew end decorations & collect afterwards, hand out order of the day and hand out blow bubbles after the service (no confetti, petals, rice allowed!). Not a necessary part, but helpful. Mine just wore their own clothes, but I did have a button hole & corsage made for them to wear.
