Vegetarian tapas inspiration needed

We have friends coming to stay on Saturday night, one is a veggie, the other a meat lover. To make things simple I thought about doing some tapas style dishes so we can eat, drink & be merry, but all be happy with our food.

I will do some sort of potato dish, some salad & pimentos, but need inspiration for something else that's substantial that my veggie friend can enjoy. The meat eater is sorted - either ribs or spicy (happy) chicken wings.

Please share your favourite veggie dishes!

    I don't have any recipes for you but what about stuffed mushrooms, garlic mushrooms, jalapeno peppers stuffed with cream cheese, vegetable paella or Spanish omlette?

    I love broad beans & chorizo. Maybe I'll make that too. Poor veggie, I should be more sympathetic to her dietry needs!

    Pimientos rellenos (rice-stuffed peppers), patatas bravas, zarangollo murciano (stewed courgette with onions)... Something with manchego cheese - thick slices dipped in flour, egg and breadcrumbs and deep fried until golden, served with quince paste.

    Check your veggie mate likes mushrooms, mine hates them. In fact, for a veggie, my mate dislikes an awful lot of vegetables. ?

    What about roasted peppers stuffed with cous cous & goats cheese. Dead easy & super yummy!!

    Lots of olives, mediterranean (sp, I know!) vegetable quiche, ratatulie (sp again - having a thick day!).

    Spanish omelette is peasy easy!! fry and onion and boils come potatos , beat enough eggs to fill the pan (sorry I can't be exact on amounts, I always guess it - you should get a good indication from an online recipe!) then mix the strained potatoes and onions into the egg, pour into a hot greased frying pan and cook on a slow heat. chuck under the grill to set the top. It always seems to work much better if you mix the hot potato and onions into the egg rather than putting the potato and onion in a pan and pouring the egg on top for some reason!

    I often chuck some peas and peppers in it too.

    Oooh, thats the other thing my aunt often makes (she is Spanish) - take a few (3 or 4) peppers, different colours and put them under the grill to char and blister the skins, then put them in a plastic bag and seal it. As they cool the skins come off, remove all the skin, stalk, seeds etc then cut into strips. add raw red onion cut into rings and marinate in the fridge with olive oil and white wine vinegar - goes really well with salad and the spanish omelette!

    Thanks everyone - there are some tasty sounding things here. I'm pretty sure she eats mushrooms, but maybe will go with the stuffed pepper just in case! I may even have a got at making a Spanish omlette!

    Spicy potato dish (patatas bravas) is nice and I recently had a small risotto dish which was substantial. Ooh and a lovely butter bean/tomato stew.

    Yum yum, that all sounds lovely, can I come ?

    Trying to think of stuff I've had in La Tasca ? - patatas bravas, Spanish omlette, veggie paella, some sort of roasted aubergine thing?!?

    I would also say, don't shy away from doing some meat dishes as well for those of you who eat it - I'm veggie but if I go to someone's house I tend to feel quite bad if everyone's eating veggie stuff just on my account!
