cariad, 30 March, 2008 at 09:14 Posted on Off Topic Posts 0 15

For dinner tonight

i need to go shopping so i can get anything

something thats not high in fat but very tasty and that takes about 10 mins to prepare and i can then stick in the oven and forget about

i havent been eating too well this week and its playing hell with my stomach

i am thinking fish of some sort but i am useless at cooking fish and maybe a stir fry or some veg i can throw in the oven and leave

can you give me your fave recipes please that are simple to make and tasty to eat [?]

btw it doesnt have to be fish it can be something veggie or meat based we are not fussy eaters at all

You can poach fish in a m/wave in about 3 minutes. With some roasted veg or salad?

We had a very bland tea last night as we weren't very hungry and both had had an upset stomach.

Pan fried fillet of fish - melted butter, garlic, rosemary & dill and potato wedges.

The fish was vietnamese river cobbler and whilst very meaty had no real taste of its own.

Now I'm no Nigella, but I just get a dish like a lasagne dish, put about 1" of water in it, put the fish in, put some salt and pepper over it, and stick a couple of bay leaves in the water, and m/wave for about 3 mins (this is for one piece of fish - I guess you might need to increase for >1)

I usually do this with salmon, but I guess other fish would work just as well.

Grilled lamb chops, jacket potato and salad or veg.

    Quick, tasty and relatively healthy.

    Salmon Stir Fry:

Marinate the salmon chunks in a mixture of soy sauce, lemon juice and a couple of teaspoons of sweetner. Leave it to marinate for about an hour, then stir fry it while slowly adding in the rest of the marinade. Get the pan really hot and it will crisp up the salmon a bit.

Its delicious and really healthy served with stir fry veg and brown rice x
