What is your signature dish?

quackers, 7 March, 2012 at 17:32 Posted on Off Topic Posts 0 47

As in if you were having people round the one dish you pull out of the bag that you know you rock at?

Mine is lasagne simple but great and I always make the sauces from scratch.

I'm just being nosey really

    Pansit! A lovely Fillipino dish.

Used to spend a lot of time in Saudi Arabia as my dad works out there and there is quite a high rate of Fillipino workers there too and they gave us the recipe and I've never had anyone dislike it.

    I could eat it everyday!

I'd love to be able to cook, but I'm useless so I suppose my signature dish would be cheese on toast! OH makes an amazing stew, but with sweet potato, butternut squash and loads of spices, it's gorgeous and definitely his signature dish.

I make wicked enchiladas, if I do say so myself! But... if I had to pick the real wow-ers, they would be:

    Homemade Poptarts:

Or braided lemon curd/cream cheese bread:

That one really gets rave reviews, and the recipe can be found here.

Another lasagne here. It's the only thing I'd be confident enough to cook!

It can vary person by person, I was told it was almost a Fillipino bubble and squeek...the base is chicken and noodles and then whatever veg you have in the house, I always use the same though which are green beans, baby corn and carrots. I've added cauli and mushrooms before my none of my family are keen on those so usually leave them out now.

Heat up olive oil, add coarsely cut garlic and ginger to taste to flavour the oil and remove when crispy. Add the white part of spring onions and cook until soft then add diced/sliced chicken breast, sear those off and then chuck in your veg of choice (including the green part of the spring onion) and cover in fresh (no oxo/knorr, proper, chilled fresh) chicken stock. Cook for 30 mins then add medium egg noodles and continue cooking until they are soft. Simple as that!

I serve it with chicken adobo on the side. The recipes online for adobo are pretty much what I do. Soy sauce (I use dark) white wine vinegar, garlic, ginger and onion.

I marinade chicken thighs overnight for the best flavour but it needs a minimum of 4 hours. Once it's marinaded I add water to take out some of the vinegar, but I like it really strong so don't use too much water. I've found the adobo can be a love/hate thing, I'm the only one in my family that likes it but when I've cooked it for friends quite a few like it too.

Asian style chicken/king prawn noodle soup it always popular can be made as spicy or not as you want. Its filling enough to be a main meal though rather than just a soup. My H's fave is my parma wrapped stuffed chicken breasts with tomato and balsamic sauce and mini roasties. Loads of veg- winner.

I made lasagne on Monday. Made everything from scratch. Pasta, white sauce, tomato sauce. It was literally the best thing I'd ever made!

I make a good chicken pillaf, bolognese and chicken and mushroom risotto. I'm more of a dessert person though - my chocolate trio dessert goes down well as does my lemon cheescake and apple and blackberry crumble with 5 different sugars in the topping!

When friends are coming I like to do a roast, I cook the baddest roast leg of lamb, stuffed with rosemary and garlic roasted on top of onions, with the creamiest cheesiest mash, honey roasted carrots and parsnips, fluffy roasted potatoes marinated in soy sauce complete with homemade onion sauce.

I tend to experiment and cook something new on people when they come round but I have had requests for my fish pie, spag bol, beef stew and penang curry so depending on who is coming one of these would be my failsafe
