Wheat-free recipes please

Hi All, you may remember I posted on here a couple of weeks ago talking about wheat intolerance?

Well now back from Holiday H and I have started wheat-free this week and I am struggling to come up with filling lunch ideas for H to take to work with him. I made a large Potato salad and also a Tuna and 3 bean salad that did us both for Monday and Tuesday lunches and today I sent H off with the last of the potato salad and a Prawn salad I knocked together this morning. I guess the problem is that whereas I am happy with a bowl of salad topped with Tuna/Chicken/Prawn/Egg etc, H needs something a bit more substantial and that is where I am struggling.

Any tips/ recipes would be most appreciated.

    Why don't you try an alternative to wheat-free bread like rye bread? My H is wheat-intolerant and our local supermaket has got a great gluten-free section where he can buy bread, muffins, crumpets and all sorts of cakes and biscuits too.

    Thanks Consuela Banana - can you recommend anything specific?

    I bought some wheat-free museli and also flapjacks and I haven't had any myself but H doesn't really rate them very highly - maybe it's just a case of getting used to them?

    Ideally I would like to find a good pasta and bread substitute but I went to the local health shop and the bread all looked like it was really dense and weighed a ton IYSWIM?

    My Mum makes a really gorgeous rice salad, it has rice (obviously!) red kidney beans, spring onions, cucumber, sweetcorn, a little salad dressing and probably other stuff I can't remember!

    All the gluten free pasta I have tried has been pants, but you can get rice noodles (blue dragon I think) in all the super markets, they're a bit like tagliatelle only lighter and they're really nice - not sure if they'd work in a salad/packed lunch but a lovely alternative to pasta at dinner

    Don't have recipes as such but have you tried quinoa? Great as a salad bulker and as the "stodge" bit of a meal. It used to be a health food shop thing but I think you can buy it pretty much anywhere now.

    Wheat-free pasta is utterly grim and to be honest, I wouldn't even bother with it. We've tried all the different ones on the market and the texture is just wrong. It's the one thing we don't eat anymore and after a while, you don't tend to notice it.

    I can't recommend anything specifically no - just get thee to your gluten-free aisle and start trying and testing! H eats a rice-based cereal now with loads of nuts and "bits" in - it comes in a sort of barrel-shaped plastic container and he raves about it.

    H is gluten-free and I don't eat any meat but honestly, it's not impossible to eat well and we don't find it that difficult. We just eat a lot of vegetarian meals and quite a lot of fish - oh which reminds me, he has to avoid soy sauce at all costs because that too contains gluten I think. But other than that - it's just a question of checking the packaging.

    Be careful with crisps - Pringles are the only ones he can be absolutely certain of - a lot of the others contain wheat flour.

    You can get a tamari soy sauce in health shops that is gluten free. Also, kettle chips are fine.

    My FIL has coeliacs and makes his own bread but I don't think he uses a recipe out of a book - he and MIL have experimented with combinations of potato, rice & almond flour to get a consistency that works. He lives in Indonesia where it's quite hard to avoid gluten but when he vists this country he loves the Sainsbury's free from products. Last time he was here he really enjoyed the seeded rolls they do. They're always better slightly warmed or toasted though!

    Thanks all - I think I'll go make a rice salad for tomorrow!

    And the Pringles tip - awesome - we have been avoiding all thing's like that just in case!

    Tortilla chips? I don't think we've found any yet that H can have! I know they're supposed to be made of corn but most of them are still no-go for him. It's frustrating! ?
