White eggs & brown eggs

Iris, 27 April, 2008 at 19:47 Posted on Off Topic Posts 0 9

I've just been reading Mr Small (to the boy, not to myself) and it reminded me that when I was a kid eggs were white or brown. Nowadays they all seem to be the same colour. What has happened? Which colour is extinct or have they all become beige?

Well they had white eggs in india, so they're not extinct ?

i think the brown ones are considered to taste better and to be healthier (although obviously they aren't) so these ones get sold more

I find they all tend to to be a "skintone" type shade these days, but last week we were up at Crieff Hydro and at breakfast the chef was cooking eggs to order, and he had trays of eggs out and they were all white eggs. It was the first time I've seen white eggs in yonks.

I buy blue shelled eggs which have a lovely bright yellow/orange yolk and when I was shopping yesterday (waitrose) I saw some really dark brown ones.

WKS - I saw an egg farmer interviewed a few years ago. The perception is that brown eggs are more nutritious and so became more popular than white eggs.

Gradually the farmers stopped selling them.

My parents live in the middle east and all the eggs in the supermarket are brilliant white. I assumed it was due to different types of chickens being kept in different countries?

We have the blue ones too - Clarence Court or something, I think. The yolks taste really rich; they're a lot like duck eggs.

Cotswold Legbars are blue and Burford Brown are well.. erm, brown. We buy both when the chicken farm at the end of our road has run out and they're yummy?

I too havent seen a white egg in years, and did wonder what happened to them.

Tis all to do with the breed of hen!

commercial layers tend to be hybrid birds and on the whole they lay brown eggs, unless they have been crossed with a legbar or aracana. hens that lay white eggs just dont produce enough to make money, plus now people expect eggs to be brown because they taste better, utter nonsense!! (i bet brussels have a hand in this too!)
interestingly though the colour of the egg will be the same as the hens earlobe!
my hens lay boring brown eggs but they taste delicious and the yolks are the yellowest yellow!

I didn't know hens had earlobes. <hangs head in shame>
Great explanation though, I can rest easy. Little things like that do tend to bug me so thank you.
When I was a kid I'd only eat white eggs.
