Yet another culinary one...rib marinade

DaisyDaisy, 31 March, 2009 at 16:27 Posted on Off Topic Posts 0 7

Please does anyone have a T&T but absoutely fecking delicious marinade for ribs? I have never cooked them before, but they came on my pork belly roast this sunday, so I have frozen them until I know what to do with them. I have a couple of american recipes, but they have such a vast list of ingredients that I haven't gone there.

Please can anyone suggest? Many thanks?

PS I know I probably use more than my fair share of culinary question credits, but I am ever so grateful and do go on to use amost everything suggested..so you are enriching my life. And my waistline. x

If you want to keep it simple you could do an Asian-stylee thing with chilli, soy, honey and lime.

Or just buy a bottle of Nando's marinade - it's good stuff. You didn't hear it from me though ?

Ah, thanks lovely Sophie, that is so much simpler., what the hell is 'artificial smoke' anyway.

I've just used some Nandos peri peri to marinade a chicken breast for my dinner..so I am certainly not above such help.

I do a dish which isn't really a marinade as such but is bloody lovely (although sounds a bit weird). Coat the ribs in a mixture of ginger powder, mustard powder and sugar and grill, when browned put in a casserole dish. Slice an onion and fry with some finely chopped garlic until the onion is translucent, add L&P, lemon juice, tomato sauce and water and bring to a simmer, add some cornflour to thicken and then pour the sauce over the ribs and cook in the oven for about 45 minutes to an hour. I usually cook it in my fan oven at about 170 degrees. Its gorgeous served with some crusty bread. I don't have the exact measurements for the rub/sauce as the recipe is at home but I can post it tomorrow if you like?
